This is a great recipe; my SD was not as thick/sticky so i added 30g more of flour. Still, it makes really awesome pancakes, fluffy and no hint of SD. Thanks for sharing !

If sourdough discard/starter is omitted and replaced with yeast, you need to adjust the hydration too

You can try replace the egg with 40g milk. Adjust the consistency by adding milk/flour is too thick/thin

Yes you can cook on the same day, instead of put into fridge overnight, you just leave it at RT 1/2 - 1 hour

Even with my recipe? Usually the egg sugar in batter will cover the sourness.
