AMAZING RECIPE! Made these this week. Used the fresh ginger with sugar option. Refrigerated overnight. Only change was that I made them a bit smaller as drop cookies and rolled them in turbinado sugar instead of regular. (I think they look better as drop cookies. They flattened out just enough) Thank you Dorie!
