On the second one? Sometimes if the coupler isn't grabbing the zerk especially with a battery powered grease gun it'll push itself off the zerk like that. Though normally you cam solve that by applying more pressure.

Eh the only time that really matters is if it can’t get it into the hub. If it’s doing its job just wipe the excess off. They aren’t really sealed like you think. The inside of the zerk is but the hub is open to allow grease to flow. And that’s actually why you use grease instead of oil in these, it’s designed to be open. You have grease hubs that have little to no seals and don’t need seals then you have oil bath hubs that need a constant level of oil and need to be sealed completely. Those are the hubs where the seals matter.

You might try using a torch to heat the rusty bolts and it might come apart to inspect it . The bearings are in rings and are sealed when made . If they are leaking they will come apart and pieces will jam and stick as if welded .

I don't think putting that much grease in a bearing is wise. Packing it solid full and then spinning it up can lead to overheated bearings and overheated grease. I was taught to grease a bearing while it is spinning.
