Most of the time we install every-other pier, so that there might be 3 or 4 holes open at one time, unless the hole is filling with water. This helps with concrete deliveries to minimize waste. Also, the soil generated during the drilling process gets everywhere, so if adjacent piers are too close, then the soil would get into the open shaft nearby. Because of all this, we usually skip every other pier, and then (on the next day) "fill-in" the ones that were skipped.
