1:20 former Rupertswood Up platform.There was also a Down platform as well.

Yes there was a down platform. It was removed when the RFR project moved the 'down' line out to increase the speed around that curve. The up platform still survives although it is not in use at all.

I can’t tell if it’s just the video quality, but how do V/line drivers see the signals while travelling at high speed considering how small they are?

They are quite a lot easier to see in reality than on a tv screen. Cameras tend to make things look a lot smaller the further from the camera they are. 👍😀
