Can you get a minor for not putting handbrake on?

No. However it's best practice so, if you then roll back or stall because of it you could get a fault or more as a result.

The test routes aren't sat nav destinations. These videos are meant as extra help. In my opinion, if you need to know the test routes you need more practice.
