FOR THE COTE-DE-BEOUF
1 3-inch thick bone-in ribeye steak
canola oil
1/2 cup butter, divided
4-5 sprigs thyme
3 garlic cloves
Wedge of lemon
FOR THE SALAD
1 shallot, thinly sliced
1 stalk celery, thinly sliced
1/2 castelvetrano olives, pitted and chopped
2 scallions, thinly sliced
zest of 1 lemon
1 tbsp chopped mint
3 tbsp chopped parsley
1 clove minced garlic
1/3 cup olive oil
1/4 cup canola oil
1/2 cup white vinegar
1 small head Boston lettuce
1 small head little gem lettuce
1 small head red leaf lettuce
DIRECTIONS
Season steak with salt and let come to room temperature
Cover the surface of a large pan with canola oil then heat over high. Sear steak on all sides, about 10 minutes total. Remove steak from pan. Pour out 1/2 the oil in the pan.
Add in 1/2 the butter and baste for 3-4 minutes per side.
Add in remaining butter, thyme, garlic and continue to baste until internal temperature reaches 125F, about another 5 minutes.
Remove steak from pan and let rest on a rack for 15 minutes.
Slice steak and drizzle with butter from pan. Squeeze lemon over slices
To assemble the salad, mix all the ingredients except for the lettuces in a bowl. Place the lettuce leaves in a bowl and drizzle dressing over. Serve immediately.

Yup. Couple years ago I was a dishwasher and this newly hired 45 year old chief was a complete looser. Worst than this guy. He would tell me and my friend (we were both 18) how he used to do crack and meth and a bunch of other shit. He said he was late to work one of the days because he dropped 8 tabs of acid and felt loopy in the morning (no shit). He would also go to my co-workers and ask them if they wanted to sell weed for him, and then proceed to ask for gas money because he had to pick up weed In Minneapolis (which was 3 hours away). Me and him had to take the trash out one day, and he just gets a bowl out of his pocket, puts some weed in there and asked if I wanted to hit, regrettably I did but it’s a funny story. I left about a few months after and apparently he got fired for stealing food. Very interesting and shitty guy. P.S. He used to brag how he smokes pot in his house while his kids were asleep.

He really wanted to be able to cook with you one day, but sadly he passed away in June to a heart attack caused by a condition that he had. Comment from 3 years later.😆One little thing I like to do when cooking a steak in a pan like this is, for browning the sides, I crank down the tongs with the little closer on it to stay in place after I have the meat positioned where I want it. I get the tongs horizontal right with the pan, sitting on the edge so the whole thing stays put. A little practice is all it takes and it works great! You got a friggin edge sear meat holder right friggin there! Badass!
