We're dropping a 502 cubic inch big block into a Bel Air bracket racer. It's backed up with an automatic overdrive trans. A new radiator is also installed, as well as a high performance shifter.

Stock is overrated. Unless it's something rare or has some special history have some fun with it. A lot of mods can be reversed.

They put the radiator in with the fan an didn’t install the shroud they were talking about

That's assuming it had it's drivetrain in it. If it was just a shell and without the engine and transmission the rare goes out the window since it's missing the original drivetrain
