Sambar is the most popular South Indian accompaniment which pairs nicely with rice as well as the breakfast idli/dosa varieties. Among the various variety, the chosen one for the day is Brinjal and Drumstick Sambar cooked in Udupi style. The specialty of Udupi style sambar is freshly roasted spices, coconut, and little sweetish sambar. The addition of fresh tender drumstick takes the sambar to a whole new level… too..yum !! INGREDIENTS:
Sambar powder -
Coconut oil - as needed to fry ingredients
Kashmiri red chili - 5
Red chili - 3
Coriander seeds - 4 tbsp
Fenugreek/Methi seeds - 1/4th tsp
Chana dal - 1 tsp
Urad dal - 1 tsp
Cumin seeds - 1/2 tbsp
Mustard seeds - 1 pinch
Curry leaves - 3 - 4 strings
Hing - a small piece
Turmeric powder - 1/4th tsp
Sambar -
Toor dal - 1/2 cup
Tomato - 1
Turmeric powder - 1/4th tsp
Salt as needed
Drumstick - 3
Brinjal - 1 big
Water as needed
Prepared sambar powder - 4 tbsp
Jaggery - 1 tsp
Hing water - 1 tbsp
For tempering -
Coconut oil - 2 tbsp
Mustard seeds - 1/2 tsp
Urad dal - 1/2 tsp
Dry Red chili - 2
Curry leaves - 2 strings
