I found your Chanel a while back searching out ole Hickories and got hooked. This Chanel gets better and better every time you turn around. I’m in Denver and leaning towards a Stumps gravity smoker now, I have a cheap stick burner a UDS , two Kamado Joes and a 1950 pellet fridge. This rig you have now looks like a game changer can’t wait to see some cooks on it.

I’m a huge fan of the channel and have learned a ton from you about cooking on my new summit kamado! We did the ribeye steak using the Weber grill grate last night. I would love to know when you’re going to be out serving BBQ in the DFW area. We live in Abilene, TX. Love the channel!

As for serving in the DFW area, I’ve been fortunate enough to have been doing catering events and weekly sales for the last 3 years. LSG must have recommended temps to set the paint for a cure, I seem to remember when I did mine the temps were higher to bake on and set the oil, however it was another manufacturer. A lot of mass/steel to bring to temp, once you reach your temp you'll have to see what size fire is required to maintain it. Looks great, hope it went well

Great looking pit. Did you burn in the grill as well? Don't forget to buy a coupler lock so someone can't hook up to it and take off. Looks like you have the tuning plates set right. Can't wait to see some more videos with this thing.

@@DskiGrillz I would probably run a chain through a couple of wheels and around the leaf springs as a back up. The chain would also help prevent someone from easily taking it if it's hooked to your truck where the coupler lock cannot be used. These things will slow a person down if they are thinking of stealing it but someone who is really persistent and has enough time could still take it. I would definitely have insurance on it. It looks like you live in a nice area so hopefully stealing is not an issue there. I keep locks on my 18' flat bed trailer and my utility trailer and knock on wood, they have never been stolen.

@@Mr2004MCSS Great advice. I was planning on putting a chain through the wheels and tie it around a large tree positioned behind the trailer. Hopefully this will aid in keeping the trailer safe from theft. It’s sad but true that you need to spend a few more hundreds of dollars to protect what you worked hard to get.

Wow that's a really impressive rig! Man I have been thinking about trailerizing my smoker but I also know that bbq, especially brisket, needs a nice long rest. Do you ever cook for like parties or something with it? how does that work? I am thinkinga bout doing that but not sure other than maybe competitions if I will really use the trailer feature or not once I have it. I don't know that I would do any competitions but who knows....

I cater on weekends and also have provided BBQ for weddings, birthday parties and soon to come a corporate event. I understand your hesitancy but if your thinking to do mobile catering, the trailer is worth it. As for briskets, you will need to cook them the day before an event, let it cool to 180, then place it in a cooler. This will keep the brisket safe for 8 hours at least. If the event is later in the day, you can reheat the brisket to an internal temp of around 140 to ensure it’s just like new before serving. Hope this helps.

@@DskiGrillz Thanks for the advice, So you still would pre-cook the brisket for a mobile catering gig then that's what I figured. Do you reheat in the smoker or something? I figure the smell of the nice wood fire even if it's pre-cooked would be good marketing and advertising versus just showing up with meat .... I dunno I think I might be overthinking it. LOL My smoker is 24" x 48" with two racks.

@@DskiGrillz I figured htat must be what bbq guys around me were doing, other thing like some fresh cooked chicken or whatever...I have been cooking bbq at home on an offset for almost 10 years now but I remember thinking that stuff was cooked on site before I knew any better LOL I can see the smoke smell draw people in....tha'ts cool! Do you think a 24 x 48" sized smoker is worth having on a trailer axle? Or is that not big enough for that? I mean portability would be very nice to have

@@SNeal5966 I think it’s big enough depending on the event. The workhorse pits has a trailer with a 48” smoker on it and it looks really slick. It’s called the workhorse pit 1975T. Check it out so you can get and idea on how it would work. Catch you later.

Hi John, Yes, there is a 1975 in the near future. This should quench my offset taste. I used roughly 3.5 cans of Pam for the burn in but bought 8 cans just in case. I hope to use the remaining cans burning in the 1975 in the next month or so. Thanks as always for your support.

I missed the PS portion but my plan for the open space between the storage and the charcoal grill is to install a stainless steel sink. Definitely needed for future onsite catering events. Take care.

You're not supposed to use the fire management basket on your initial burn to cure the paint and season. Probably nothing happened.
