Mark, I have a Breville dual boiler the the 920 model. If I bought the Breville naked Portafilter would I be able to use a 20g VST competition filter? I have heard that it would not work, and I’ve also heard it suggested that it would? So I’m kind of confused please give me some truth. Also are their any other upgrades to BDB you would recommend? thank you sir!

Hi JK, I do like the Pro 600 with dual boilers. More consistently accurate brew temps and ability to adjust steam pressure and brew temp independently. Pro 600 uses a vibration pump and is not plumbable direct to waterline. The Rocket Type R uses a rotary pump and is plumbable direct to waterline. Marc

Hi CG, Thanks for the question. I do not have a specific video on replacing the group gasket and shower screen. I have done it in a few videos but with about 1300 total I'm having a tough time remembering which one to point you to. But, The process is very simple. Remove the old/original group gasket using something pointy like a very small bladed srewdriver or metal pick tool. You just pry out the gasket by getting the tool between the outer edge of the gasket and metal lip of the channel in which it resides. Work it out a bit at time moving around the gasket. When it's mostly free it can be pulled out. The shower screen is held in place by the friction of the gasket so it will come free and usually drops out with the gasket. Installation is reverse of removal. Mount the shower screen in the gasket then work the gasket into the channel in the group. Nice video Marc. I am really enjoying these live streams. Looking forward to the flow control demonstration in a week or so. I think what would really be interesting would be a side by side comparison of a flow control machine and a pressure profiling machine; say the ECM Synchronika and the Vesuvius. Pull a variety of profiles from each machine and talk about the differences and/or similarities and what you like about each. I would like to see which type machine has the most profound effect on a good quality single origin coffee. I've been roasting coffee at home for several years now and want to start playing around with flow control/pressure profiling, but not really sure if one process is clearly superior to the other. A side by side comparison would answer a lot of questions I'm sure others have as well. Thanks again for the great videos and stay safe!

Hi Marc! Great video like always! I have an ECM synchronika and have been having fun experimenting on it. I do have a question though about steaming on it. Is it okay to steam different types of nut milks in it? I know you must purge the wand afterwards but since the milks are made from nuts is there a higher chance of nut particles that can get inside the wand and clog it or get into the boiler? I also have the same question about steaming milk with chocolate in it. Any help with these questions would be appreciated. Thank you!!

Hi Sarita, Thanks for the kind comment and question. Happy to hear you are having fun with your Synchronika! No problem steaming non-diary milks. As with dairy milks always be sure and purge the wand before and immediately after steaming any milk. That will keep things running smoothly and prevent milk of any variety getting into the boiler. No need to be concerned about nut particles. I think it's best to add chocolate after steaming. But you could try prior. It's honestly not something I've done but thinks it's highly unlikely to cause any problems so long as you purge quickly after steaming. Marc

So I will not be able to plumb the machine in right now. I bought the filter to put inside the water reservoir can I do any kind of a pre-infusion with the reservoir

Hi Michael, Thanks for the question and your patronage. Pro 700 is an excellent machine. Beyond the standard E61 pre-infusion you can raise the lever to the point just before the pump turns on and you will get a small amount of brew water applied to the coffee. It's more of a pre-wetting as there no real pressure behind it. If you have flow control on your Pro 700 you can do long pre-infusions with a low flow rate from the reservoir. Marc

Thanks for all the work you do, Mark. My question is this., I just purchased the Profitec 600 with FC and paired it with the Mignon Specialità grinder. I am trying to achieve a baseline for my grinder (using Verve , Sermon beans) but I am struggling big time. With the addition of the FC I am not sure where to begin. Do I figure out a FC setting that mimics no installed FC on the machine and then dial in the grinder. Thank for the help!

Hi James, You are welcome and thank you for the question. ps. my work is fun! Anyway... I would start by dialing in grind with flow control set to mimic stock flow rate of ~8g/sec. That should be in the neighborhood of 1 and 1/4 turns open. But do go through the calibration. If you missed that procedure it's easy. Just measure water volume or weight output over 20 seconds at each 1/4 turn opening of the valve. Divide the ml volume or g weight by 20 to get grams per second. For a vibration pump machine I'd dial in to a 1:2 (or your preferred brew ratio - Verve recommends a

Some of my beans cant take much pressure at all on the tamp or the pressure (barely a light press maybe 8-10lbs) on the espresso will be off the clocks and then some beans i have to put my entire muscle in to get espresso pressure even if roasted a week ago. How do i pick beans that wont get too much pressure and dont take 100 lbs of tamp to make espresso? Is it the oils on the beans?

Hi D, I advise using a consistent firm pressure for tamping regardless of the beans. Use grind size to control extraction timing. Hi Susan, Thanks for your kind comment and questions. The Profitec Pro 700 is an excellent machine. Get one and you likely never need to upgrade! I do like the Sette 270 Wi. If you are extra particular about your espresso its weight based dosing it is magical and takes the dose weight variable out of the equation. It can most definitely service the Pro 700. Just be aware it's an appliance grade product. Compared to machine grade grinders it has a lower duty cycle, lots of plastic and is louder. On the other hand it's very fast and produce a beautifully fluffy clump free grind. And there is some peace of mind for an appliance grade product with Baratza's fixed price repair program. Treat it well and it'll be fine but should you need service it's pay one price. More info on that here: baratza.com/grinder-repair-program/ For many users the Sette 270 can service both espresso and grinding for other brew methods. Like most espresso focused grinders it tends to produce more fines when grinding at drip sizes. Really depends on how particular you are about your drip coffee. For the most part I'm not that particular about drip so I'm fine with grinding for drip with the Sette. Plus with the grinds bin and indexed grind settings on the macro and micro adjustment rings it's quick and easy to change back and forth between espresso fine and medium grind size for drip. If you are very particular about your drip grind you can go with a second grinder for that purpose. I like the Baratza Virtuoso+ for that. It has the widest grind size range of any Baratza grinder so if you ever wanted to grind coarse for press or cold brew you're covered. I'm also curious to the differences between the ECM Mechanika IV Profi vs ECM Technika IV Profi. Do they use the exact same rotary pump? Dual boiler machines like this could do the trick but are not really intended for commercial service and you will see some brew temperature drift if doing many rapid fire extractions in machines with an E61 group. Hi Marc, great video! I have a question not having to much to do with this video. I am acutally pending between the Profitec Pro 600 and 700. Key differences to me are the different pumps. Could you tell me, whether a vibration pump is more advantegous than a rotation pump (running from water reservoir) when it comes to the extraction quality? I have heard that the smoother pressure build-up with vibration pumps is better and that these pumps forgive more little errors regarding the preparation of the portafilter. Is there an overall quality difference between both pumps just with regards to the coffee quality?

Hey Lorenzo, That's a great question (and you can ask any topic on any video)! I'll have to answer in general terms as there all kinds of variables which play into the benefits of one pump type of another. First few are straightforward: Rotary pumps are plumbable and vibrations pumps are not. Rotary pumps are quieter and considered "commercial grade". Brew pressure adjustment on the 700 is accessible underneath the machine. Many vibe pump machines require removal of the housing to adjust brew pressure. The 600 is a little unique as brew pressure is adjustable behind the drip tray without removing housing. How the pressure build and stock flow rates influence: Both machines are available with flow control. Using flow control one can mimic a vibe pump machine on a rotary pump machine or mimic a rotary pump machine on a vibe pump machine. Darker, blended or older beans may benefit from faster initial pressure build and flow rate. Lighter, fresher and specialty beans may benefit from slower pressure build and lower flow rates. A plumbed in Pro 700 can do line pressure pre-infusion. You'd want a pressure regulator on the plumbed in line to adjust it. But if you do that, you can partially lift the E61 lever to just before the pump comes on and line pressure is applied to the coffee. Adjust the pressure on the regulator down to say 1.5 bar and you'll get a really slow pressure/flow build up for as long as you like. Then kick up the lever, the pump comes on and hit the main extraction. So a lot of variables there. But let's say you always use the same type of beans and you don't want flow control and will not plumb in a Pro 700. For that my recommendations for best potential shot quality in stock machines are the Pro 600 for lighter/fresher/specialty coffees and the Pro 700 for darker/blends/older coffees. If you go with flow control either machine can mimic the other and you'll have a lot more control beyond just fast or slow build of pressure and flow. With that you're able to switch bean types and adjust to what works best. I hope that helps! Marc

Easy quick and IMO excellent upgrade. The coating is fairly resistant. You can and should use Cafiza or similar with them. Hey Marc, it'd be interesting to see a comparison between a Breville/Sage Dual Boiler (BES920) and one of these 'prosumer' dual boilers. I know they're completely different and serve different demographics BUT they also have a lot in common. The Breville packs in a lot of the same features for considerably less $, dual stainless boilers, PIDs, filtered water reservoir, programmable preinfusion, volumetric or timed shots, adjustable brew and steam temperatures etc. Enough to make many prosumer machines blush. So the question remains, can a budget machine, worth a fraction of the price, hang with the 'prosumer' big boys when it comes to pulling a shot? I'm under no illusions as to which machines are better (and more aesthetically pleasing) but if the Breville can produce a comparable shot to an ECM or Profitec, that's got to be a win for espresso drinkers on a budget, right? Hi SJ, Thanks for the request and you are welcome for the content! So if you watch my videos you may know I make a clear distinction between appliance grade and machine grade products. I have used the BDB in the past - it's been a couple of years. Breville does pack a lot of features into their products. They do an excellent job of hitting the key marketing points like PID, etc. and I think the design is excellent from their unique wall plugs to convenient hidden storage trays. It's just hard for me to get around all the plastic, lack of durability and serviceability. We carry Breville products and they do have a market with a lower price point. But you have to get into this type of a product knowing it has a limited life span and is not user serviceable like machine grade products. Treat it well: good water quality, keep it clean, be gentle, descale as needed etc. and it should serve well but if/when something goes wrong after warranty it may not make financial sense to have it repaired. That's not the case with machine grade products. They are durable, very user serviceable and with proper care will go for decades. Personally I'd much rather invest a couple hundred more $$ on a machine grade HX boiler machine with PID. Marc

Very good question and response. My oracle touch is now leaking and has steaming / temperature issues. Now this is after breville recommended me to descale and turns out descaling does more damage than helps. Never going back to breville. I’m going to be careful with the r58 and hopefully with the rotary pump I can get 10-15 years out of the machine versus 2-3 I had with the Oracle.

Key difference is the Pro 700 is plumable and uses a commercial grade rotary pump. The 600 uses a vibration pump and is not plumbable. You mention the Profitec pro 700 can do pre-infusion if it’s plumbed but you didn’t demonstrate how it’s done. How long do you recommend to do pre-infusion?

Hi Steve, Thanks for the question. Well, I demonstrated what happens at the pre-infusion position without a PF in place. How long you should pre-infuse depends on the coffee you are using. So there's no right answer. My basic recommendations: For a very fresh from roast coffee (within a week or two) like lighter roast, single origin, high altitude a long low flow or pressure pre-infusion can help tame excessive brightness. I'd let that run at 2 bar until espresso just breaks through the filter basket. Easier to see that in bottomless extractions. For not fresh, darker roasts or bean blends I would not do much pre-infusion at all. Maybe a few seconds to help saturate the grinds before full flow/pressure is applied which can help prevent channeling. Keep in mind these are basic principles and starting points. Try different pre-infusion times with the coffee you are using and taste! Marc

Thanks for all the content Marc! What started as browsing for a grinder replacement has led to a deep dive into espresso this quarantine, so thank you for the adventure! Based off your clear appreciation for the ceado’s I’ve been looking at the e37j and e37s, 3 questions: 1) does the speed of the “s” make it messier in getting outside of the filter basket? In the comparison you did, the “j” slower pace seemed to make it more neatly fill the basket. And 2) I’ve heard you reference that higher power motors are more reliable (assuming here the “s” might have slightly longer lifespan than “j”) but why is that? Is it just the motor having to work less hard? Higher power = higher thresholds of quality? And 3) what is the exterior finish of the black ceado e37? Is it powder coated or other? It looks different material than silver and wondering if one is more durable. Thanks friend! -Brandon

Hi Brandon, You are welcome for the content and thank you for the comment and questions. 1. The speed of the S does not make it messier IMO. Both the J and the S distribute well. Mess is usually the result of overfilling a filter basket. 2. Higher power motors are put under less stress so tend to have longer lifespans. Honestly motors are very robust in both grinders so should go for decades if not abused. Higher power motors also have higher duty cycles. 3. I believe the black E37S is powder coated. It's extremely durable IMO. We've had one in the studio and been using daily for many months I have yet to see any marks in the finish. It''s not bulletproof of course but can handle some abuse. The silver is a similar treatment to the black so durability is same. Hope that helps! Marc

I was under the impression that the rocket model r58 you are referring to in this video also does preinfusion as long as it is plummed in. Actually rockets with rotary pumps can be plummed and have preinfusion. Am I misinformed?

Hi Robert, Thanks for the question. The R58 does do the standard E61 "pre-infusion". But that is quite different than a line pressure pre-infusion on a plumbed ECM or Profitec machine. The E61 "pre-infusion" is actually more of a pre-wetting of the coffee puck and not a constant flow of line pressure through the puck. Plumbed Rocket machines (and those of most other manufacturers except ECM/Profitec) have a solenoid valve on the plumbed in connection which closes the machine to line pressure unless the pump is running. I really wish the R58 I bought 8 months ago would have come with the "Chronometer" of the new machines. It's really subtle, nice looking and so useful. It's kind of dumb when the much pricier machine don't have a feature that lower-end model have but at least I got the Acaia Lunar for that purpose now. 1- I wonder how useful actually is the R58's pre-wetting "non-plumbed" like if it really makes a difference or if it's not even worth trying to hit that extremely narrow "activation spot" that's like not even 5mm between Off and Pump Activation "Brewing". 2- Hmm so 0.2bar make that much of a difference or is it just the high pitched sound from the smaller holes that makes the extra pressure appear bigger than it actually is? 3- As I said I already own the R58, now I was looking for a new machine to gift my mom, not as high-end but still something at least with "HX + PID" and ideally with a integrated shot timer. I've compared most Rocket and Profitech so far and is it me or overall the Profitec machines are less expensive for their Rocket equivalent model? Also if you aren't going to plumb the machine anyway, you lose the pre-infusion ability and the possibility of using a BWT filter, so 50% of the reason to invest a big extra from Vibratory to Rotatory is gone and therefore rather save and go for a Vibration pump which won't affect the taste of the coffee at all and will last plenty long enough for a home user usually just doing 2 cappucino per day?

Hi michael, Thanks for the question. Both machines use rotary pumps which are much quieter than vibration pumps. So both are very quiet. In my subjective judgement the Synchronika is a hair quieter than the Rocket. Marc

Hi, I've been watching lots of videos and am nearly ready to bite the bullet on one of these machines as I plan my dream kitchen. I was looking at installing a hot water tap by Quooker for tea and boiling pasta etc. Up to a litre of water needed. I'm wondering if I used the budget I had for this and went for a higher end espresso machine would I be able to use the water tap for this purpose?

Hi J, Great to hear from you and thanks for the compliment. Wish I'd had a close up camera. A couple of the shots in prep had what I call "marshmallow" crema! Surface had a goopy brown texture like a perfectly roasted marshmallow - it was divine! My Synchronika left with my coworker AJ the day we started the social distancing about 4 weeks ago. He was in the midst of a long term project/experiment appraising Yirgacheffe shots as the beans aged starting at 4 days from roast out to 30. He also took some of the 4 day coffee and stored using a variety of methods including freezing. I have some preliminary results and they are very interesting. Look for a video with those at some point. When this is over I'll work in my favorite dual boiler again and of course it will be the star of AJ's video with results. Stay well! Marc

Hi Mark - writing to you from Dublin, Ireland. I wish I could buy my machine from you as I’d love to support WLL. I am in the market for either an ECM Synchronica or Profitec pro 700. I won’t be plumbing it in for at least a few years. Which would you recommend? And it is possible to have a non-flow control machine fitted with flow control after the fact? Thanks!

Hi KC, The Pro 700 and Synchronika are nearly identical internally. Made in the same production facility in Milan, Italy. The key difference between the 2 is outside finishing details including the lever operated valves on the Synchronika and it's angled PFs which I prefer. More detail on the Synchronika like the matching chromed ends of levers, PFs, group lever. Also, Synchronika is the easiest machine to open up. 6 exposed screws on top and all the panels come off in under 1 minute. Other than that the specs are identical. It is possible to add the flow control after the fact. But, they have been in short supply! Manufacturing slow down due to pandemic has exasperated that! Hope that helps! Marc

Hi LZ. Wide shot should be in audio sync. The 2 closer cameras are iPhones which are out of sync. Wish I could fix but it's what I have to work with at the moment. Marc
