He could have but he wanted to go after Black's king since the attack matters more than the sacrificed piece

Because if you take it you free black pieces = the attack gets harder cause black defense gets easier. The pawn on d7 actually blocks everything and if ever bishop takes d7 there is rook takes d7 which gives activity to the rook. In this position it was all about the activity.
