Dungeness Crab in a Delicious Coconut Red Curry with Vegetables

Today I made some delicious Dungeness Crab in a Cocunut Red Curry Sauce with vegetables. While this dish is considered spicy because of the Red Curry, it's mild in my personal opinion, you can always dial down the Curry and adding additional cocunut milk will help tame the heat.
I hope you folks give this recipe a chance and try it. I have had this recipe for years and finally I have a platform to show off my cooking and fishing so it's a perfect place to not only catalog my recipes, but to share them with my viewers to enjoy to their hearts content.

I’m surprised it wasn’t dry..,, that was cooked a long time…, the liquids kept it moist?!

Yes that is correct, when you don't boil the crab first, cooking the crab directly in the curry keeps things moist and full of flavors mostly because the curry and coconut contain lots of fatty oils helping to keep things juicy and flavorful. thank you for the comments.
