Hi, i used to get a fried crab dish at this one Korean restaurant that im now thinking was just serving a Canto dish- anyway, we used to be able to eat the hardshell crab- they were big pieces of legs and other parts of the shell that were genuinely the hard shell and not a molting crab. Can you please tell me how to fry a crab properly/long enough to make the shell edible? Thank you

why did the cook take out the crab to cool and drain and then refry a second time? What is the purpose? like is it to make it crispy? very cool to watch him in action

Yes! Double fry to keep the crispness and avoid the crab (chicken, shrimp, fish) from going soft! 😊

Yes! thanks Diane for responding :) We always double fry to make sure the ingredients stay crispy. Or alternatively, you can prep ahead and fry again before you serve. It's always best if you serve the food hot off the wok!

I would start with 3/4 Tbsp for each crab (also depending on the size of the crab). Start less and you can always add more :)

Hi, thank you for watching our video! The first time we fry it is to make sure the ingredient is cooked (at a lower temperature), and we almost always fry a second time at a higher temperature to get a more crispy texture, and also the ingredients will actually be less greasy after you fry at a higher temperature.

Hi! We don't recommend eating the crab shell because we didn't fry the crab that long (to make sure the crab meat is at its best!)

i will never understand the point coating the inedible shell with flour and all that seasoning. how does it ever impact the crab flesh which diners will then spend the next 2 hours trying to extract with excrutiating effort?

The shell isn't inedible, lol. One of my favorite dishes is a deep fried hardshell crab dish- they'd fry it for a long time to make the shell edible- very very crunchy but totally edible.

@@cbatara80 you gotta puncture the two nerve centers, one located in the abdominal area and the other between the eyes. it's pretty difficult imo cause you need to do it quickly and the target area are quite small i believe. some people chill them first as well to sedate them.

He tore it out of its shell in 1 sec. That’s good enough. How is that not humane? It’s essentially as fast a death as putting a knife in the brain. At some point, the method is just performative if other ways are just as fast.
