Today we are sharing how to cook the famous Cantonese style fried crab with pepper salt. The key to our perfect crab is to double fry the crab with a lightly coated flour. Our homemade pepper salt is a great combination with the chili without overpowering the sweetness of the live crabs.

Ingredients Used:
Crab - 2
Chopped Green Chili - 6 Pieces
Minced Garlic - 5
Corn Flour - 4 Tbsp
Frying Peanut Oil
Steps:
Prep the Crabs
1. Wash and clean the crabs
2. Chop off the claws and lightly crab the claws with a crab cracker or the back of the knife
3. Open up the shells and clean out any inedible parts (Save the shells for steaming)
4. Cut off the legs
5. Further cut the legs smaller at the joints
6. Cut the body of the crab to smaller pieces
7. Add cornflour to the prep crabs and event coat the crab
Fry:
1. Heat up a pot of frying oil to 350F (180C)
2. Add in the crab and fry for 2 min
3. Flip the crab to avoid the crab from sticking together
4. Take out the crab and reheat the oil to 350F
5. Fry the crab for the second time for 30 seconds
Cook:
1. In a clean wok, add 2 tbsp of oil
2, Add green chili and garlic and stir-fried until fragrant
3. Add the crab
4. With a clean hand, slowly sprinkle the pepper salt over the crab and stir fry with the other hand
5. Tunr to high heat and cook stir fry for 2 min
Steam:
1. Steam the crab shells over high heat for 6 minutes

Thanks for this recipe! I can't wait to try it this weekend. Do you season the corn flour? There used to be a buffet near me that had fried crab but they closed down. I've been trying to find a new location that had fried crab. Now, I can do my own.

Hi, i used to get a fried crab dish at this one Korean restaurant that im now thinking was just serving a Canto dish- anyway, we used to be able to eat the hardshell crab- they were big pieces of legs and other parts of the shell that were genuinely the hard shell and not a molting crab. Can you please tell me how to fry a crab properly/long enough to make the shell edible? Thank you

Any crab legs will work .really .I've done with all .prefer snow crab more meat less money and good taste

These are Dungeness Crabs. In restaurants sometime called Canada crabs.

i was wondering can i substitute corn flour with potato starch or corn starch? or does corn flour work the best?

why did the cook take out the crab to cool and drain and then refry a second time? What is the purpose? like is it to make it crispy? very cool to watch him in action

Yes! Double fry to keep the crispness and avoid the crab (chicken, shrimp, fish) from going soft! 😊

Yes! thanks Diane for responding :) We always double fry to make sure the ingredients stay crispy. Or alternatively, you can prep ahead and fry again before you serve. It's always best if you serve the food hot off the wok!

how much home made salt and pepper should i use?

I would start with 3/4 Tbsp for each crab (also depending on the size of the crab). Start less and you can always add more :)

Hi! What kind of pepper is the green chili pepper? Is it jalapeno? Also, what kind of pepper seasoning did you use?

i will never understand the point coating the inedible shell with flour and all that seasoning. how does it ever impact the crab flesh which diners will then spend the next 2 hours trying to extract with excrutiating effort?

The shell isn't inedible, lol. One of my favorite dishes is a deep fried hardshell crab dish- they'd fry it for a long time to make the shell edible- very very crunchy but totally edible.

Hi, thank you for watching our video! The first time we fry it is to make sure the ingredient is cooked (at a lower temperature), and we almost always fry a second time at a higher temperature to get a more crispy texture, and also the ingredients will actually be less greasy after you fry at a higher temperature.

Hi! We don't recommend eating the crab shell because we didn't fry the crab that long (to make sure the crab meat is at its best!)

I stopped watching because of the way you are killing the crabs. Yes, we’re eating them. But damn, you could kill them first and then chop them up.

Be honest with yourself. You're killing and eating them not because you need it, but just to enjoy it because it tastes good. How you kill it doesn't matter.

@@cbatara80 you gotta puncture the two nerve centers, one located in the abdominal area and the other between the eyes. it's pretty difficult imo cause you need to do it quickly and the target area are quite small i believe. some people chill them first as well to sedate them.

He tore it out of its shell in 1 sec. That’s good enough. How is that not humane? It’s essentially as fast a death as putting a knife in the brain. At some point, the method is just performative if other ways are just as fast.
