This is a very cool idea. A minor concern about behaviour, giant spiders are animals and thus should flee when their attacks fail unless cornered or crippled. Granted, this would be somewhat boring (which is why the concern is minor) but I feel it is important to include personality in these things.

Also forgot to add this, but my bet for who wins is the Scarecrow. The fear that it has is very useful as most creatures have attack rolls and pretty low wisdom. So it will likely be getting that fear off and giving its opponents disadvantage of their attack rolls. But, we'll have to see if this is how it goes

You forgot about the Nilbogism trait, where the spider needs to succeed on a charisma save every time they even attempt to damage the Nilbog. Not that it mattered much here cuz it's impossible to win against it if you only do 1 attack per round, but be careful next time.

This comes into play in the latter half of the tournament, was just easier and faster to reduce the opponents damage automatically than rolling saving throws.

Putting Nilbog is basically rigged, any creature with a single attack has a literal %0 chance of winning.

IS there any limitation on the Nilbog ability to reduce damage by 6 each turn?

Unfortunately for the other creatures with only one attack, no :( I've tried to keep them as close to the real stat blocks as possible, so unless the nilbog is somehow incapacitated only a select amount of creatures have a chance of taking it out in the tournament.
