You have to try this healthy and colorful salsa! Packed with veggies, it is gorgeous to look at and delicious to taste. I love to eat this for lunch and it's always a favorite at social gatherings. Recipe below:
Avocado & Black Bean Salsa
1 15oz can black beans, drained and rinsed
2 large diced tomatoes
1 cup corn
1 medium diced onion
1 minced garlic clove
1 cup coarsely chopped cilantro
Dressing;
1/4 cup lime juice
1 tablespoon oil
1/2 teaspoon cumin
1/2 teaspoon salt
Whisk together and pour over 1 large diced avocado. Mix with other ingredients. Serve immediately with tortilla chips. Serves 6-8.
