I make a very similar salad all the same ingredients. I add sliced black olives, cucumber, cheddar cheese, avocado, and Frito’s for some crunch with a chipotle salad dressing. It is a hit every time!!

I’ve made a recipe like this for several years…but I add quinoa. I cook, 1 cup (which cooked gives you 2 cups when cooked). It’s a complete meal with all the protein in there. And it goes so far to feed a family. Thank you! Looks so delish🤗

Great salad! You can grate the garlic into the dressing, you can replace the onion with chives, and i like avocado in my black bean salad

Avocado is great except I add it to the individual portions we are going to eat because it doesn't stay well overnight in the fridge. I also add Mexican white crumble cheese on top. Manzanilla olives sliced work great with this salad also.

I have a very similar recipe that is sooo addicting! Great idea to add the lime zest, I'll definitely be doing that now. The biggest difference in mine is that I use black, kidney, and canellini beans, which is great if you like a nice complex beany dance. I also add a little bit of red wine vinegar. Btw, any tips to make this less soggy on day 2? I like to make a big batch and eat it for a couple days, but all the veggies shed their water and dilute the sauce a bit. It doesn't really bother me cuz it's so good already, I just add a little more salt and use a slotted spoon, but I'm interested if there's a better way.

I like it, but I feel frozen corn is way too comfortable for a comfort salad. I wonder if they sell canned corn? I'd add avocado as well when I make it this weekend, and maybe a yellow bell pepper. Thanks though!
