Earl Grey Tea Cake
This recipe is adapted from the New York Times Cooking recipe by Samantha Seneviratne. It has been on my baking list for some time, but I finally tried it a few weeks ago and it was so delicious! I made some minor modifications to the original recipe and added some brewed tea and substituted the milk for heavy cream. I also added the loose tea and orange zest directly to the butter to help better extract their flavours. The cake has unique taste with subtle yet complementary notes of the Earl Grey, orange zest and chocolate. Hope you give this one a try🙂
Ingredients
1 heaped tbsp loose Earl Grey tea (from about 3 tea bags)
½ cup butter at room temperature
1 cup granulated sugar
2 tsp freshly grated orange zest (from 1 large orange)
2 large eggs, at room temperature
1½ cups all-purpose flour
1 tsp baking powder
½ tsp salt
¼ cup strong brewed Earl Grey tea at room temperature
¼ cup heavy cream at room temperature
¼ cup chopped dark chocolate (not chocolate chips)
Directions
1. Preheat oven to 350 degrees Fahrenheit. Grease an 8-inch round baking pan and line the bottom with parchment paper. You can also just grease and flour the pan.
2. Beat butter for a few minutes and then add sugar, orange zest and loose tea. Cream butter and sugar until very light and fluffy for about 6-8 minutes on medium speed, scraping the bowl with a spatula regularly.
3. Add eggs one at and time, beating well after each addition. Continue beating the mixture on high speed for 1-2 minutes until the batter is very aerated.
4. Sift flour and add baking powder and salt.
5. Combine brewed tea and heavy cream.
6. On low speed add the flour mixture and tea cream mixture alternately, starting and ending with one third of the flour until the flour is incorporated- do not overmix.
7. Gently fold in the chopped chocolate.
8. Bake for about 35 minutes or until an inserted cake tester comes out clean. Let the cake cool in pan for 10 minutes before removing.
9. Serve at room temperature topped with whipped cream.
