3g instant yeast 1tbsp inulin powder (or 0.5 tbsp sugar/honey) 60g egg white protein powder 20g allulose 1 tsp lemon juice/apple cider vinegar (or 0.5 tsp cream of tartar) 1/3 tsp vanilla extract (optional) Pinch of salt 130ml water Got it.

Do beat the egg whites to really really stiff peaks for a fluffy loaf of bread, this could take some time (15-30mins) depending on the speed of your electric hand mixer 😉

I made this today! Aug28,2023. It turns out exactly like this video! Fluffy, airy and crunchy on top. 🎉 It's perfect! But on the down side, 1) unfortunately it has strong eggy smell.. 2) Also when chewing, the texture tastes dry like eating sponge.. This is my third keto recipe on KZbin that I try (from multiple channels).. I'm going to keep trying. Regardless, I am happy the final result turns out great! 🎉

Hi Erin! I’m afraid we cannot skip the egg white powder in this recipe as this is what gives the bread a more bread-like texture. Try looking on Amazon maybe? Some people got Judee’s dried egg white there

I love your bread especially when you added egg white protein in it this is so awesome because I never seen a bread that has much protein in it mostly just carb haha. Turned out very moist too wow awesome share my friend.

謝謝你喔☺️要用蛋清蛋白粉才可以做到這個跟麵包相似的質感,用真蛋白的話烤出來會像梳乎厘。你可以到iherb看看,我用Julian Bakery的無調味蛋白粉,最近都有貨~

Great video thank you for sharing ..not sure where I went wrong mine came out very hard, shrunken and dry not like yours :-( does your oven have a fan? ...mine is a fan oven so I will try again with reduced temperature (maybe 145C) and keep an eye on it

I had the same problem and I had to reduce the oven to 300 F from 320F . I also open the door after it finishes the 30 minutes and just leaves it for 10 minutes. My texture is not as pretty as in the video, so I may be changing my egg whites brands

Thanks for sharing it looks great only thing that has stopped me from making the egg protein bread recipes is that it looks like they might feel like memory foam and that might be an issue for me. Did you get a memory foam feel from this?

Hi there! The instant yeast is what makes a huge difference here. By adding the yeast and letting the batter sit and proof, the bread will turn out very soft and fluffy and it doesn’t feel like memory foam like some other egg protein breads do. Some people find this bread a little dry though, and I would suggest adding a little oat fibre /or egg yolk powder so the bread would turn out more moist, do check out my other video where I experimented with these ingredients :) kzbin.info/www/bejne/lWGvdGmlr6eKmMU

Thanks for this recipe. It looks very, very good. I will try it because I have never used yeast as a rising agent for keto bread ever before. I have tried some of the other KZbin variations to Maria's protein bread in the past with mostly good results. (Though it's true: some of the recipes I've tried have more of a "memory foam" loaf texture than others...) But I am extremely excited to see your new recipe as YOUR bread texture really looks like real bread and not at all like dense "memory foam". One other thing: I have never gotten a good result with toasting my protein bread slices in a normal bread toaster. It burns black really FAST and I always get a terrible smell like when your hair accidentally catches fire (Ugh!) Strangely enough though, I don't have this problem when I toast/roast my slices in my Philips Air Fryer. Would you happen to know why this is? By the way: thanks for the beautiful video. Short, clear, precise & to-the-point with no unnecessary off-subject "blah-blah-blahs"! Great editing also 👍👍👍

Hello, thanks for the kind words! The protein bread does turn black faster than regular ones (especially because we’ve used allulose), I usually turn my bread toaster on a lower heat so it will toast slowly and nicely :) also, it’s important to beat the egg whites to very, very stiff peaks so the bread will turn out fluffier, and with the help of the yeast, the texture will not be dense nor chewy at all. I hope you would enjoy it! ❤️

the result will be different. Powder makes this bread super light. but if you use fresh eggs will make this bread eggy and wet.

Instant yeast needs warm water and inulin? I thought only dried active yeast needs warm water and baking soda needs sugar....

Hi Kent! We do need a tiny bit of inulin/sugar to activate the yeast in a low carb recipe, because there’s no carb in other ingredients in the recipe that the yeast could feed off from (unlike regular bread recipes where the instant yeast can feed off the starch from the flour). Also, it’s my usual practice to proof & hydrate the yeast with water and inulin every time before using it, the idea is to make sure it’s active so we won’t be using yeast that’s no longer alive. 😊

Hi Sophia! If you only use real egg whites, it’ll end up as a soufflé, egg white protein powder is needed here to create that texture that’s closer to regular bread :)

I tried to bake this bread unfortunately It didn't turn out as expected..I'm so sad..the batter can't achieve stiff peak even when I follow the recipe..I don't know what I did wrong

Hi Teaya! So sorry for the delayed response. It takes a much longer time to whip up egg white protein powder than fresh egg whites, usually takes me 12-15 mins on high speed, but some people say it takes them 20+ mins to achieve stiff peaks. It depends on the efficiency of your electric hand mixer. Hope this gives you a better idea 🙂

你好,謝謝你喜歡這個食譜😃阿洛酮糖在這裏的主要用途不是它的甜味,而是使麵包更柔軟,而且烤出來會有金黃色,如果沒有的話可直接省略,但注意麵包柔軟度會差一點😉

@@ketofoodiehk 谢谢您! 有一种是99.99 % soy protein, 另一种是73.5% pea protein,还有是plant protein bland其中protein average qty per 100g 是 52.4%。有一种说法是要加入杏仁粉或椰子粉。感谢您指导!🙏 我买了好几瓶,就是为了做whey protein keto bread的。

今日又再用新嘅打發器整左一次 發泡比上次好左好多 不過我見都打左成20分鐘,同你片入面比都仲係差小小咁 但我都偷雞放左入去焗 然後一拎出黎都係得你一半咁高 然後我再睇多一次你條片 發現原來關爐之後要係入面放一小時 我一夠鐘就打開個爐拎左出嚟 是否因為咁所以失敗? 失敗左2次有小小氣餒 不過我決定過兩日再試 係入面放一小時呢個步驟好緊要?

Hello Po Yi~放焗爐入面等麵包慢慢降溫呢個步驟比較重要,因為如果麵包快速降溫就有機會回縮架~記得全程用最高速打蛋白💪🏼

Is it possible to use something like Erythritol or Xylitol? I live in Germany and Allulose isnt available here.

Hi Ninidil! Sure you can use the same amount of erythritol, just note that the bread will turn out a little less soft, and the exterior will not turn as brown upon baking. Allulose tends to make baked products softer and brown upon baking. Hope you’d like it :)

Hi there, the replacement for inulin is either sugar or honey. Any sugar or have to keto sugar?

Hi Evelyn! Any non-keto sugar will do. The yeast will feed on inulin/non-keto sugar/honey, but it doesn’t react very well with keto sweeteners.

酵母對生酮甜味劑沒有太大反應,麵包會發不太起來做不到蓬鬆口感喔,你可用半湯匙糖/蜂蜜代替菊粉,酵母會吃掉糖份的所以不用太擔心☺️

What brand of egg white protein you have used? The one I have doesn’t mix well with water.

Hi Preeti! The egg white protein powder from either Julian Bakery’s or Judee’s (with sunflower lecithin) works for this recipe. egg white powder doesn’t whip up as quickly/ easily as fresh egg whites, so do make sure you beat the mixture on the highest speed :) For my electric hand mixer, It usually takes 15mins to beat the mixture to stiff peaks.

Hello! egg white protein powder is the main ingredient for this recipe and can’t be replaced by fresh egg whites unfortunately, if we use egg whites, it’ll turn out more like a soufflé than a bread. I’m testing out new recipes using egg whites and will share once I get the ratio right 😊

@@ketofoodiehk Well, could whip up eggs separately then add rest of mix keep mixing even add some whey protein powder, sure would look similar the same when putting in the loaf pan. Suppose can only try.

How would you adjust this recipe to fit in a 9x5 pan ? I have four bread pans, and they're all that size. LOL

Hello! I would multiply the recipe by 1.5 times in that case (except for the yeast and inulin) It’ll be like: 3g instant yeast 30g lukewarm water (for proofing yeast) 1tbsp inulin powder (or 0.5 tbsp sugar/honey) 90g egg white protein powder 210g water 30g allulose 1 tsp lemon juice/apple cider vinegar (or 0.5 tsp cream of tartar) 1/2 tsp vanilla extract (optional) Pinch of salt

We tried to adjust it ourselves, and it was looking amazing, but then when I pulled the foil off at the end it was a deflated mess with a rubbery layer across the bottom. Not sure what happened, but even though the texture went wrong I could still tell it tastes good. LOL Thank you again for the information. 😊

I’m sorry to hear it didn’t turn out as expected! It could be because the egg whites were not stiff enough, it’s important that the whites are beaten to the stiffest peaks for the bread to be fluffy, also, try shortening the proofing time of the batter to 30mins or even 25 mins to reduce the chance of the meringue deflating and liquid ingredients sinking at the bottom (creating that rubbery layer). Lastly, remember to let the bread cool down gradually and set for an hour in the oven :) Happy baking! ❤️

係喺焗爐入面攤一個鐘之後攞出嚟縮?正常只要俾個麵包慢慢降溫就唔會縮太多~或者試下蛋白再打挺身啲~好開心你鍾意呢個麵包❤️

請問前面已加了一湯匙的甜菊粉後面又加阿洛酮糖,甜菊粉是不是量太多了,麵包會不會太甜了,還是需要這麼甜才能將蛋白粉打發。

Hello~我們需要甜菊粉的糖份,酵母將它消化後會變活躍,而阿洛酮糖另外一個很重要的用途是令麵包烤出金黃色及更柔軟,這個麵包是有些微甜味的,但我覺得不太明顯😉

Hello! The egg white powder is needed in this recipe to create that bread-like texture, if we use fresh eggs instead, I’m afraid it’ll turn out more like a soufflé or a cake.
