I love Nili's channel. My current version of this bread uses cottage cheese (blended) and egg white powder. I add some cream of tartar and allulose. Not sure who created it, but saw Jen make it on Keto Rewind.

Hello. Cream of tartar is a powdered acid (specifically, a powdered form of tartaric acid). It’s a byproduct of winemaking (grape fermentation) that’s collected and purified. It’s on the insides of the wine vats and is collected after the vat is empty. So now you know! Love your channel. ❤❤❤

We had a Keto Meat up here about two weeks ago and one of the awesome folks that attended brought some of Nili's BBBE rolls holy smokes they were perfect for a hamburger! A touch sticky to the touch because they didn't have the alluose to brown them up, but fabulous none the less! I make Indigo Nili's recipe but I use 2 8x4 pans and bake at 30 minutes. Also these loaves freeze really well! She also recommends slashing the top of the loaf so it's less likely to "blow out"

@@HighfalutinLowCarb I agree Wes! Jet Upgrade is exactly that. An upgrade. I made a post here about it. I think it’s great. Absolutely the best texture (soft, moist and not stale at all). Follow my recommendations for reducing the butter or cream powder as it retains the flavor and keeps it from shrinking on the sides. Score down the center for a perfectly shaped loaf.

I've also added yeast and a tsp of sugar to the water and let it proof. It was actually pretty good and gave a nice aroma to the bread. I've tried both of these recipes and enjoy them both. To avoid the blow out, take a knife and score it straight down the middle. It will split more like a loaf of butter bread, and looks prettier. It looks like it would do absolutely nothing, but it really does work.

Nili’s “My best bread recipe yet” was a total game changer for me! I didn’t realize how much I missed sandwich bread until I tried hers. I use that recipe to make hotdog and hamburger buns. I almost cried at having a real hotdog on a bun!!!!!! It makes fantastic grilled cheese, hint, grill cheese on the outside of the bread to make it extra crispy!!!

Cream of tartar / wijnsteen, winestone is according to wikipedia: Potassium bitartrate, also known as potassium hydrogen tartrate, with formula KC4H5O6, is a byproduct of winemaking. In cooking, it is known as cream of tartar. It is processed from the potassium acid salt of tartaric acid (a carboxylic acid). The resulting powder can be used in baking or as a cleaning solution (when mixed with an acidic solution such as lemon juice or white vinegar).

Nili has some updated versions with different add ins that make the bread even better - arrowroot powder, inulin, butter powder and even a stick of real butter! She and Keto Upgrade both have versions with yeast (both risen and not risen) as well.

It’s interesting that that’s the recipe you chose. I use her ( Nili’s) recipe that has arrowroot in it. I like that better also there’s no nutritional yeast or gelatin like Janet Grettas. I also use egg yolks, real egg yolks. It makes a moist, moist bread. Also, you’ve got to make her grated butter bread.

Again, I had tried Maria's bread and never again. I tried this other ladies and it was better but then I've added my own twist and it's absolute perfect now. People don't know it's not bread I make the best sandwich ever. I guess we all find our own way. Love your Channel

I used egg white protein and it just wouldn’t do anything! Is there a difference between egg white protein and powdered egg whites? I’m usually a decent cook, but this has confounded me…twice!🤷♀️ Can’t wait to give it another try! I just discovered your channel. Love your accent, BTW😀

You have to try ‘keto upgrade’ bread. I’ve tried all multiple times and hers IS THE BEST. Smells, feels, tastes, toasts like bread.

Do a groove on the top of it like the split love that you buy in the store it has a cut on the top of it, do that and it won’t be as deformed.

First off...I love love love this channel!! I just feel I need to mention that Maria Emmerich has also updated her recipe from the one tried here. Add a couple tablespoons of gelatin, you get a texture very VERY close to Wonder Bread. I personally enjoy Maria's recipes very much. If it wasn't for me finding her when I did, I would probably have fallen off the keto wagon. Her recipes saved me. I love Nili just as much! They are the ones I always go to first when in need of any recipe. Kudos to both of these kitchen experts and ALL their versions of the PSMF bread!❤❤❤

Cream of tartar is a bi product of red wine. It is almost pure potasium. This is one of the ingredients I put in my electrolyte drink along with magnesium and sodium.

Indigo Nili’s bread recipes are the best. The one with frozen shredded butter is my favorite, as many have already stated. Buttered and grilled with cheese, or corned beef, or patty melt style can’t be beat!

I tried to whip powdered eggwhites with a hand mixer, 25 min. Clean, clean technique, no greasy anything. It was a no go. I’ve often whipped fresh whites to a firm peak with my hand mixer.

I sliced mine and placed it in a gallon ziplock bag with a paper towel underneath the loaf to absorb any excess moisture. Kept for 4 days so far!

Great video. I would like to say 1 thing. Maria does say to not over whip. Her bread appeared to be stiffer and higher than the other. Overwhip/ underwhip I think could affect it but with that said it does appear the second loaf seemed more like a bread. Thanks for video for sure. Good job!

That powdered egg white powder is so expensive! I wonder if we could make the second one with regular eggs, and then still add the whole egg powder ?

With Maria Emerich's it helps if you get all the "dough" into all the corners of the pan and make sure there isn't any large holes or cavities when filling. I know typically with whipped egg whites everyone is fairly gentle so as to not deflate them but with the PSMF bread you want to compact it down into the pan (still gently).

Added to say that if you do another bread battle you ought to try Keto Upgrade's egg white bread. Also my favorite is one I've mashed up between Maria's, Indigo Nili, and someone else I don't remember but it has yeast, nutritional yeast and arrowroot powder in it and it's the best so far. I'd like to make Keto Upgrade's since hers has yeast as well but she also lets it rise.

I’ve been making this bread with the whole egg powder for about a year and I love it. The texture, shape of loaf and flavor are perfect. Also , I take mine out of the pan immediately and cool on a rack so it doesn’t steam.

I have tried the original recipe and various modifications in the past. Hated all of them. Pure styrofoam! Had to drink beverage with each swallow because I would choke. But this latest one you are showing from Nili looks like it is worth giving it another chance. Thank you for doing this one.

I like to add 3 TB butter powder instead of the whole egg powder. Works great. So does about 3/4 a stick of frozen grated butter. It's basically bread, not really dry at all...and not as low fat either, but for people looking for the best bread remake, it's very close.

I sliced it and stored in a gallon zip top bag (with a piece of paper towel on bottom) and I’m on day 3 and it is the same texture as when I first sliced it!
