I had a rather dull and slightly chipped Shun Japanese knife, and I just used this to sharpen it. I used the diamond disk till the chips were gone, then proceeded to the 3000 and then to the 6000 disk, and finally used the strop. It is as sharp as a razor blade now, and all the small chips are gone! I'm very very impressed.

I can see that it works...in The Netherlands we call it " Hufter proof "....everyone can do it... But i think my wet stones are better or more usefull for a bigger variety off knives. And i have more grits to choose from... But if you not have a system and you want to try somthing....go for it... Great video.

looks good, clever idea. I've noticed though that real knife snobs don't like any sharpener that's easy to use regardless how well it works. I use a Block sharpener. I sharpen my knives, scissors, utility knife blade, fish hooks, hatchets, axes with a sharpener that I can fit in my shirt pocket.

I usually hate sharpeners that are super different. Imo nothing beats a good hand stone! This on the other hand really look like something that could help people understand edge angles and such. Being able to see each swipe in real time without having to remove the blade from the stone sounds awesome! I think this is going to be better for the average person than say a fixed angle sharpener or a powered one. Awesome video!

I think it's an incredibly easy way to sharpen kitchen or chef knives and fixed blades, as you know I typically freehand Sharpening, and I'm extremely good at it but anyone can use this effectively with great results

I also hand sharpen on Shapton Kuromaki and Shapton Glass -- I thought this was just going to be gimmicky junk of no interest -- solely on there because it was a sponsored video. But I was actually quite impressed. The system looks pretty good. Way overpriced though. Two little whetstone disks and a leather strop for 99 euro? That's the price of two Shapton whetstones! No way in hell would I spend that.

@@twatmunro I think for folks that struggle with Sharpening it's going to be great, the price is a little steep but 4 stones and a great quality Strop I don't think it's ridiculous, but yes a bit steep, I do think the ease of use does add something great and appealing to it. it's machined well and its effective, the company sending it for me to test has nothing to do with what I say, every single company that sends me something is told first and foremost that I will be 100% honest, and I have no reason to lie, I'm not paid nor am I affiliated in any way, I make zero cents if anyone buys this

@@JPC326 you would want to use the 3 then a lower one, but the higher the number the more abrasive it is, so a 6 micron Strop compound will be more aggressive than a 1 micron.

I’m seeing some doubt about this system in the comments so here’s my take. I saw a vendor at a recent restaurant supply show showcasing this product and it does a really good job for such a straight forward system. I was able to use it and experience it and can say with absolutely confidence that this will put a usable edge on your kitchen knife in less than 20 minutes. This system has its limits but I’d recommend buying this for the person who isn’t into knives but needs a good method of sharpening. It is intuitive to use and will not take a huge commitment to learn the process.

Hi Jared.! Another impressive segment though we must mention that grandfather made something very similar for us to sharpen our Bushcraft knives. The magnet hold is length wise (longer & strong hold on the knife itself). Most of our knives are Scandi grind but with adjustable angle we can use on folders (i.e. Demko,Ka-Bar & Honey Badger). All these folders have 90 degrees spine for multi usages. It's simple & easy to use in the field. Been using the sharpener for two decades now & it still rocks.! A simple mod Jared or users of the system is the strengthen the magnet or add some harder retention device. In fact, one could do the carpentry work to develop wood blocks for 17°, 20°, 25°, etc. and a retention system or soft vice grip to keep the knives in place with a Teflon base to ease the glide.

Kind of like it, can see it works but you need to take care with the larger knives at the tip there but overall it seems cool. The angle changes slightly on other systems I've used to at the tip. I'd like to try it. Result was damm good. Wow

Just when you think there can't be any new ideas in sharpening... That is a really clever design. It won't work for every knife, but for the ones it does work on, it should be really easy to get good results and get them fast. It seems like the magnet block should be taller and wider to make it even better.

Been sharpening for 40 years, I like it! Let's face it, mechanically held sharpening devices take off steel only where it counts, like a straight razor; the benchmark of sharp. This method as the finish only, with 200 thru 800 done by hand , finished up with this tool and 1000 to 6000.

The only thing i see as a problem with this system is the magnets . I am not a fan of magnets in sharpening systems, all the fine metal sticks to them and can damage the finish on the knife . Even with that, this is brilliant. The price is going to be prohibitive to most buyers though .

Maybe it is worth mentioning that the grinding angle will not be as it say on the magnet. Depending on how thick the spine of the knife is there will be a slight difference in the angle. I have seen people use the center line of the knife as the reference to grinding angle and I have seen people use the grinding side as references, but I have never seen anyone use the opposing side as reference to the grinding angle. I don’t judge, just reflect. 😊

Also note the wheel change the sharpening direction as the wheel turns. First it is 90 deg to the blade then at the center wheel is horizontal with the blade then it is back to 90 deg. The final blade edge will be a mix of grain pattern. Not the best edge but maybe sharper than it was.

Jared, It's far more than just easy to use. It has many other advantages too. I;ve just bought a KME sharpener, and like it very much, but the Hort offers the following distinct advantages over the KME and similar guided systems and traditional whetstones:: 1. It's much faster, as the edge is sharpened twice along its entire edge with each pass - first as the wheel rotates upwards, and again as it rolls downward ; So on each pass, the entire edge is sharpened twice, and with perfect uniformity. This simply does not happen with other systems, no matter how careful you are. 2. It eliminates the problem of holding the blade still in a clamp, which is even more difficult than usual when using long, heavy kitchen knives. The magnets hold the blade firmly, and even if there were any sight slippage it's compensated for automatically by simply sliding back down to the work surface, thereby staying in perfect alignment with the sharpening stones for the best possible edge. 3. I would imagine that it makes it more practical to use the less expensive aluminum oxide stones, which soon develop a dish shape with more traditional systems and must be lapped regularly to keep them flat. The rotary action of the Horl should eliminate any uneven wear, so as the stones wear down they remain flat. 4. It remains to be seen how well it works with smaller blades like folders, but I see no reason why it couldn't be just as effective if made with rollers of smaller diameter. Despite being a recent KME enthusiast, I've been converted to the Horl and intend to get one as soon as possible. Anyone want a slightly used KME?

That's where it's very limited, the kme will work on most knives especially if they are not to big, this system is limited to chef knives and possibly some fixed blades but does not work on folders or small blades. That is why I think it's great for those that have no desire to learn how to sharpen well or understand what it takes to sharpen well. Someone only needing there kitchen knives sharpened.

Hold on Max Wells! Using a double width magnet holder could magnetize your pork chops. This would increase sticking to the pan when frying. Better to use the bi-polar attachment so whatever you're slicing doesn't know which end of the knife is sharpest.

Nice concept, looks like it works well. I see lots of comments that folks think because it's from Germany it's got to be good. Don't fall into that trap. It looks as though the kit you used is on Amazon for $428, or about $140 for the basic drum and magnet stand. I do have stones that cost quite a bit, but to me this at this price it looks as though your getting a VW at a Mercedes price. Then again, I myself haven't used it, so these are just my personal thoughts.

The precision fixed angle dohickey won't hold and sharpen thin knives like my CEO. Looks like I'll need a sharpmaker or some sort of bench stone for that.

Intriguing system. I see a lot of blade play. I would not buy the system as it is but if the magnetic base were a lot wider or came in multiples of three or four inch pieces then I might start saving up. Thank you for presenting this. I recently got one, but the angles are wrong. My Wusthof has about 3 degrees in the blade profile. The HORL gives 15 deg on the ‘wrong side’ of the knife, so it’s actually 12 on the ‘right side’ or 13.5 to the centre line of knife.

You would think that they would put the magnet on the WIDE part of the wood, to give it more stability. I watched and saw you needed to keep the magnet kind of "centered" and hold up on the hand pressure to keep from moving the knife. Excellent idea, but yeah, I'm no expert but I can see that should have been rethought.

The only change I would make to the product would be a way to retract the magnets in the vice block to remove it safely and easily from the knife. I can see a lot of people cutting themselves while trying to grab the knife below the edge and slipping. Or trying to force the block off the knife while holding the handle. Maybe include a rubber eraser for cleaning the stones and a QR code that links to instructional videos and where to purchase additional grits, upgrades, fancy storage boxes, etc. People would probably also buy a setup mat that has grooves for the block & roller with basic setup & operational instructions printed on. And maybe also make available for purchase a raised track for the roller for taller knives that have an edge the roller can't reach. When people are forced to DIY to make a product work for them, they stop using the product... and often hurt themselves. And by people, I mean me.

Interesting and for your average knife user very easy and simple usage. Definatly can see this used more on kitchen knives or even fixed blades because on average most of these knives aren't super steels so these stones would be lots good. Depending on replacement price for the stones is going to be a big factor in long term usage and like you said a coarser diamond would be nice but not 100% necessary. 9 out of 10 people isnt going to sharp their own knife on a whet stone... some have others do it.. most just use dull knives.. to much hasstle.. if only this was like 50 euro it would be a lot more acceptable for the average user... i bought one though.. i have some stones but not always feel like taking a hour for sharpening 2 knives.. and this makes it possible in 5 minutes.. that means I will do it more often.. and have even less work with it..

Looks like a pretty interesting set for the kitchen. Nice and simplistic, but maybe not for those who are squeamish about knives or aren't aware of some safety since the blade is facing upward and your hand is pretty close to the blade when using it. Still, much less intimidating than a lot of other systems and has a bit of that sterile, industrial look that wouldn't be out of place in a lot of kitchens. I think the knife industry has slightly moved on from the practice, but the larger manufacturers had set, expected angles. The French/German companies (Messermeister, JA Henckels, Wustoff, Sabatier, etc.) were traditionally set at 20 degrees, as the steel they use (usually X50CrMov15) was forged softer (56-58) so they respond well to a honing rod. Japanese knives (that are double-beveled at least) are traditionally set closer to a 15 degree angle. Due to them being hardened much higher, you can actually damage the edge if you use a honing rod on them like you would a European blade since they can be "chippy". I highly doubt that applies to modern production-made Japanese knives though, since they use more modern steels like VG-10 & VG-Max and back off on the hardness a bit... and companies like Shun include a honing rod in their larger sets anyway.

The important part of the whole operation is keeping a consistant angle. I would replace the little narrow 25degree holder and get a 5 1/2" or 6" block of wood about 1 1/2" thick. Get really good magnets, maybe 4 or 5. The stone grits are about right. And the strop would be better with a green strop compound rubbed onto the leather. Very impressive system. I'd also modify to put a razor edge on a lock back hunting knife.

Clever way to sharpening knives With the correct angle, but not for everyone. But The risk to harm yourself is very high, compared to the classic way. I think only skilled chefs may use this system.

Looks cool but need a bigger wheel and a wider magnet base. Way better than a pull through sharpener
