Here's my easy version of Pork Belly Adobo. Full Recipe 1 C Vinegar 1 C Soy Sauce 1/2 C Garlic, crushed (the more the better) 1 1/2 Tbsp Pepper 4-5 Bay Leaves, Dried

Every Filipino has there version of adobo here is mine Pork belly adobo Put the pork belly cubes in a cast iron Dutch oven, no need for oil because pork already has a lot of fat. Caramelize my pork belly first to render the fat to have a good color. Like Gordon Ramsay says no color no flavor. Once all the power belly is caramelized set aside. Next fry up 2 heads of crushed garlic” I love garlic “ with the fat from the pork. And fry the 1 tablespoon of cracked black peppercorns. And 1 cup of soy sauce and half a cup of white vinegar. 2-3 bay leaves. I don’t add sugar to my adobo because I don’t like the sweetness. I also don’t add any water because the pork will render it’s fat and natural juices. Add the pork back in and bring it to a boil. Once boiled cover and simmer for 2 hours Or put it in the oven at 350 for 2 hours After 2 hours it should be fork tender and fall off the bone And voila my version of pork adobo. Serve with white rice and garnish with green onions.

I add half the amount of vinegar for the marinade and I pan fry the meat without the marinade. Add marinade and some brown sugar and bring to a boil, then low heat, simmer till meat is tender.

Brown sugar huh? I know a lot of people like their adobo a little bit sweet. I like adding onions instead of sugar to get a natural sweetness

You can add water if you want, but you really don’t need to. The fat will render and the meat can slow cook it own fat. Just have to watch the heat
