I took some inspiration from you this week. I made your updated version of Spanakopita - it was delicious - and saved a bunch of time. I also made a cherry pie from scratch. I had both phyllo and cherries left over. I was planning to make the apple strudel but half way through the video I thought that your technique would work with the cherries. It did - in a spectacular fashion. I have learned a lot about working with phyllo from watching your videos. Thank you for that.

loved the video! I tried it and it's so delicious, all these years I have been using puff pastry and this was actually very tasty! I used golden delicious apples, like you lots of cinnamon. With the leftover phyllo I made cannoli in the oven wrapped over aluminum foil. I have cannoli tins but let Simeone borrow them. Thought I would let you know in case someone asked what to do with the leftover phyllo. I sprayed them with cooking spray sprinkled with cinnamon sugar and they were to die for. Thanks for sharing, I so enjoy your videos. I have a question about Panettone, if you make it do you use bread flour or AP flour? Thanks!
@DimitrasDishes8 жыл бұрын
Thank you very much! I make it with puff pastry sometimes but the phyllo just takes this dessert to whole other level. The cannoli idea is so unique! I never thought of that. Thanks for sharing! I love Pantone. It's a problem actually. I try not to bring it home too often because it's so addictive!! Especially with a nice hot cup of tea. I've never made it though.. The experts all recommend all purpose flour. I've never seen it call for bread flour...

I just found your channel and I'm very excited to try many of your recipes! Quick question, when you work with the phyllo dough I notice you don't keep it covered with a damp cloth like others advise - I've never used it so curious about that aspect. TIA.
@OutnBacker3 жыл бұрын
Looks fantastic. My mom made it the old world way, with stretching the dough over the whole kitchen table, paper thin. Yes, using store bought dough these days is certainly easier, and they've pretty much got it right. I might say however, that phyllo dough might turn out too dry and crackly for an apple strudel if you don't monitor it carefully....I know.... Could take more than one or two attempts. I prefer to use the puff pastry dough, which seems to maintain more moisture til the very end. Be sure to use the cloth sheet method of rolling the strudel so the dough is spiralled all through it. During the last ten minutes, apply an egg wash and lots of sugar and cinnamon to the wet wash before finishing in the oven.

What if I want the filling to phyllo ratio to be more balanced? Is it okay to either add more phyllo to what you have here or simply cut the measure of filling? Also, what if I prefer to only use both light and dark brown sugars and NO granulated sugar?? Thx.

Yes. You can also freeze it (before it’s baked) and bake it (frozen). It stays fresh in the freezer up to 3 weeks. As long as it’s properly wrapped. Bake until golden and until the filling is bubbling.

Better to leave the seam near the top than under the bottom. This way you don't get 24 layers of compressed filo and if well buttered it will flake and look more attractive. In Europe we use raisins/sultans maybe a little dried orange peel but not usually nuts and dry cranberries. I add Allspice to mine, this is a different spice not mixed spices. Please don't put it back in the freeze once it has thawed.
