You can make banana essence by placing the skins of bananas in a jar with sugar for a couple of weeks. They eventually break down and release their strong banana flavour into the sugar as a syrup. You could use this in the icing.

It is a perfect cake ❤ thank you John. I made it for a family dinner. I substituted Spelt flour as I eat low gluten. When using spelt flour I also add xanthum gum, 1 tsp for each cup of spelt flour. I added a few drops of high quality Lemon essential oil, to both the cake and two drops into the frosting. I added a little lemon zest to the top.

I just made this, for dessert after our family BBQ. It’s amazing!!!!! I made vegan frosting with coconut milk, and added Amarula cream (South African liqueur) to my frosting. Absolutely FANTASTIC! ❤❤❤

Instead of frosting, I thinly slice a little firmer 🍌 banana 🍌 and brown sugar with a very thin slice of butter in a sauce pan to glaze the bananas and then I place the caramelized thin sliced 🍌 banana 🍌 on the top of the #bananacake for decoration with a little bit of drizzle from the caramelizes sauce on top.

Thank you for sharing! I have found myself saving many of your recipes to make with or for my three nieces (ages 7, 8, & 8.5), & this one definitely made the list. The youngest will happily mash the 'nanners (her word, not mine), while the oldest will be intrigued with the responsibility of measuring with the scale, & the middle one (the bossy one) will hog mixer duty as long as possible. This is going to be fun!!!

To adjust the mixer bowl to the paddle attachment, put a dime in the bowl and 'using the screw' bring the paddle down until it just barely starts to move the dime around the bottom of the bowl. Done.

I often add about 2 or 3 Tablespoons of a good orange marmalade to my banana cakes (cutting back somewhat on some other liquid elsewhere in the recipe.) The orange flavour gives it a good tang.

This sounds very similar to my grandmother's recipe. She was born in 1917 so it makes sense if it originated in the Depression. My grandmother's recipe didn't call for frosting and it was baked in a Bundt pan. My grandmother was frustratingly imprecise in her recipes (pinch of this, handful of that method common in experienced older cooks) so I look forward to having a recipe that is written precisely. This is literally the only way I eat bananas too. Thankfully my husband likes bananas so I don't have to buy them just to wait for them to turn brown to make this cake.

I make the Australian version of this recipe, just throw everything in one bowl and fold for 20 seconds to combine then bake in a loaf tin for 45 minutes at 180°C. Delicious, quick and easy.

I would love to see a salt video. I'm not a huge fan of cream cheese....can I just substitute butter? And hey, don't throw away those banana skins. Chop them up, add to a large jar and fill with water. Steep for 3 to 4 days. Then strain and use the water for your plants. Adds magnesium and calcium for healthy plant growth. Love your videos John ❤

Wait a minute, I just realized you were getting ready to bake during a storm?! That's something to do before a storm rolls in. I've had to do that several times. I'd start making dinner while making lunch if we're gonna have late afternoon storms. You can't cook when there's no power. Anyhow, me and my mom used to buy a yummy banana cake from a store called Shop 'N Save. It was actually a yellow cake with chocolate banana flavored icing. They stopped selling it within the year they started them. Since then, no one has ever made them! And this was back in 1998. It's truely a cake I wish could be brought back. It was soooo good!

Hi, Firstly I am so glad my husband found your video online while I was panicking as a baby baker in the kitchen. My cousin who gave me the basic recipe before I found your video, god bless her for giving me the confidence and hand holding me through text. Now I always play your video each time I bake because I bake alone. if there is anyone else in the kitchen my anxiety levels peak with fear of making an error ! hopefully soon I will become confident enough in my baking as I am in my cooking. I can absolutely see a little bit of orange zest added into this cake. Just barely enough to taste it in the far background. A little bit of cardemom and a sprinkle of ginger & cloves 😋 And maybe some nutmeg and cinnamon to make it taste like a fall & winter cake 🙃

I peel and freeze 3-6 bananas for baking muffins or breads. I suppose cakes could be good also. The water crystals will break the banana cell walls whenever they thaw out.
