Whenever I make frosting I stick the mixing bowl and mixing handle into the freezer for an hour and I’ve gotta say it’s the best frosting I ever make. Just my little tip for anyone who’s frosting comes out not so great on hot day’s. I do this trick all year long and it’s below zero here. Your recipes are phenomenal! Thank you for sharing them.

Did you know that if you freeze the bananas then squeeze the skins to get all the flavor of banana when they thaw? It will increase the flavor greatly.

I've got bananas in the freezer now. There's always an extra banana left over that gets too ripe for my liking, so I just stash the extra in the freezer.

What do you mean by squeeze the skins? As in like pinch them or use a spoon to get all the banana residue off the peel?

Hey… tried this recipe and loved it. Replaced all purpose flour with whole wheat and used only granulated brown sugar. It was incredibly moist and perfectly caramelised. Also used only one cup of banana and it packed a punch! Thanks for sharing.

I just made this cake for friends and it was a total hit! I used only 2 cups of powder sugar instead of 4 in the frosting and it was PERFECT! I was not needing it to be as beautifully stiff in the final presentation as I put it in a side bowl and let people apply as much or little as they wanted to their slice. We all liked it less sweet.

Just made your recipe BUT the frosting came out grainy, you could taste the powder sugar and the butter was like it had melted even though it was fluffy, I didn't add all the sugar that it was asked for ,only 400g.as we don't like it too sweet and you couldn't taste the cream cheese at all. What did I do wrong; The cake came out perfect though.

I absolutely love this recipe! My old one, I think it was just the ratios of ingredients I was using, but no amount of tweaking was doing any good, so I switched gears to this one and I love how soft and moist it is! Because it was for a gift for someone who had gluten sensitivities and also because I was on a clean-the-pantry spree, I made this with Gluten-free flour, coconut flour, dried-blueberries and topped with a white chocolate drizzle! I was surprised that it even came out right since I absolutely mucked up the mixing process! XD

@@TheKrispyfort Hi! I used 3 tablespoons less of each of the sugars, 3-4 tablespoons additional milk, and just a half teaspoon of baking soda. I also took it out of the oven about five minutes early. The blog "Mountain Mama Cooks" has great high altitude recipes also. Hope this helps!

@Jackie K thanks for the info. I didn't even think about the altitude and followed the recipe exactly. However the cook time was too long. I checked it at 53 minutes and it was really dark brown and I took it out in a hurry. Not burned but close to it. It was still delicious. I would say the cook time is closer to 45-50 minutes for high altitude. Plus I used a glass 9x13 dish.

John, your lament of the school lunch banana has unearthed a long forgotten memory from my school days. A particularly banged up banana on which the skin had split slightly and squished some of its contents around my lunch box, that was not a fun day. Perfect timimg! I just had some old bananas and didn't know what to do with them. I baked that cake immediately haha. I used a little less mushed banana and added a good splash of rum instead. I then added some lime and toasted coconut to the frosting! So delicious! Thanks for that easy, customizable recipe !! I like it much better than banana bread.

I just made the banana cake but substituted the topping for the Mississippi mud cake and the two make a beautiful pairing. Chocolate, nut and marshmallow top of the banana cake is quite lovely. Add a scoop of ice cream and it will be quite the banana split dessert.

I just want to let you know that I baked this cake I didn't have baking soda and I use baking powder, I didn't have vanilla but I did have some type of almond flavor drops, and I added peanut butter, oh I also didn't have cinnamon and instead I used nutmeg and wow it is still really really good not a dense cake at all, it's still fluffy and DELICIOUS!! 🤤🌟🎂

Hi John, I made this cake without the topping and I made it in two batches because I have a smaller cake tin. It came out so good, delicious and yummy! My husband kept hogging it and he got a bunch of bananas the next day so that I could make some more. Lol! This cake turned out to be a success too. It was full of that sweet banana flavour although I didn’t add cinnamon and lemon. Topped it off with marble cake’s chocolate frosting. One issue with buttercream was that it had large sugar granules although it is mixed well but still.

You mentioned adding the peanut butter to the cake and frosting. I would stick with the cream cheese frosting and top with bacon crumbles and you are channeling Elvis’ favorite sandwich. Peanut butter banana cake with bacon cream cheese frosting! Yummmmmm

This looks delicious! I love all things banana, and banana cake is my very favorite. I have a recipe for a half-sheet banana cake that was given to me by a friend of my mother about 35 years ago; it’s not too different from this but it has a boiled frosting instead of this cream cheese frosting. The only problem I have is that my husband doesn’t like bananas so I never make the cake since a half-sheet cake is WAY too much cake for me! It does freeze pretty well, thoug

Just made this in a bunt pan and it came up great BUT the frosting came out not so good , first i've lessened the sugar(400g.) even though it came out fluffy you could taste the powdered sugar because it was grainy ,the butter looked like it was melted and you could not taste the cream cheese at all it was way too sweet. So what did I do wrong, because it did not come out luscious like you described.

I noticed that you have milk in glass bottles. Do you get your milk that way from a farm, or the store, or do you have your own cow? I used to have my milk delivered to my door back in the early and middle 1980's. Then the place closed. I REALLY MISS THAT MILK!!!! It was the BEST!!!! This plastic bottle milk is not the same. I can't wait to try this cake!!
