Hi Derek, I made this Quiche today to have for breakfast tomorrow. I have a non-vegan friend coming over. It is so delicious and I’m sure he’ll love it. I’m serving it with roasted cherry tomatoes and homemade seasoned potato wedges. I’m very happy with how it turned out. Frankie would be proud of me 😊. I love your channel and recipes. Thanks for everything you do, especially for promoting animal welfare. I’ve been Vegan for 12 years. It makes me happy to know how many animals I have saved from torture and slaughter. In the grand scheme of things it isn’t huge but it is for me and every vegan counts. Take care. Slainte.

I made this, I didn't have asparagus. It looked very good, but it didn't have a lot of taste, it could be me , I might have added too much pepper. I think some nutritional yeast would have made a difference, and maybe a touch of maple syrup. It is easy to prepare, it is worth doing again. It is very filling.

Tofu is like a clean palate to be flavored however you like, don’t be afraid to season it well 👍

I made this and it was amazing! I switched it up a little with the veggies and seasonings. I'm not a fan of mayonnaise, so I used stone ground mustard and oil and vinegar dressing. I did add some vegan shredded cheese in the mix. Hubs and thoroughly enjoyed it for lunch.

Puff pastry is not always vegan in the UK. Usually non-vegan puff pastry is marked as all butter, or French, puff pastry. Worth checking though. Stunning tart, looks absolutely delicious. Hope all goes well in Austin, sure Frankie will be spoiled rotten while you’re away and do a fine job of making you feel guilty upon your return.
