As a vegetarian for 37 years, it’s so nice to see your videos using real food. 15 years ago, my friends kept encouraging me to make a blog about veg cooking, and I thought no one would watch! I’m blown away at how many there are now. But I’m a legume eater, not so fond of the mock meats, so I’m delighted to see your recipes. (I realize you may also use mock meats in vids I haven’t seen.) I still eat food that may have eggs, so can’t claim vegan. Gluten free has changed my life, recently.

Didn't know that it was okay to remove the gills from portobello mushrooms. Thought that I would be removing nutrients. Did a little research and found out that the gills have a "high concentration of cellulose plant fibers". The nutrients are mainly in the cap. Thanks for this recipe. Mushroom soup is one of my favorite comfort soups.

i recently add beans to my meat dishes and it really adds the fiber that i am missing while not having too much carbs and it adds another bit of protein. making a sauce with coconut milk and penang curry paste and beans and blend it, is great as well to complement some meat.

This looks so good! I have made “cream” based soups with cauliflower, celery, mushrooms and potatoes that I blended up. Sometimes I add a small handful of raw cashews for added creaminess. I just harvested a head of celery that weighed 6# 14 ounces, after trimming it. My next soup will be “cream” of celery!

i use animal fats and oils but no oils from seeds. the poly unsaturated oils turn into poison at high heat.

Hello. Many videos here on KZbin have been a godsend for my plant based journey, which actually just happened to happen. You have inspired me to rethink my cooking and even my future. I can’t begin to express how fortunate I am to have stumbled across your channel as well as your brothers. I immediately purchased The Wicked Healthy Cookbook. During COVID I taught myself to successfully grow oyster and lion’s mane mushrooms. I didn’t know what to do with them because the harvests were extremely bountiful. Thanks to you now I have options other than tinctures or drying them out. Of course eating them but there was no way to keep up even after giving many away to friends. Thank you. Peace and love.

This is similar to what I make as the base of my green bean casserole. I also use it for stroganoff and Swedish meatballs where I just dump the plant based ikea ones in and serve over noodles or mashed potatoes

Since I am now gluten and dairy free, I was looking for a replacement for cream of mushroom soup to replace the rare occasions I use canned C of M soup...greenbean casserole...always a request from my extended family for the holidays. Now I have one! I'll be freezing some in appropriate size containers. And I won't have to cut it with milk, either! I love Miss America, she and my Molly could be sisters 😊.

You are so much fun. This is superb. I wanted to accept an offer to cook for Breitenbush Hot Springs Retreat Center back in 2008 but my yellow Lab Sashi was only 5. When I traveled for business I always had the challenge of where she would be happy. Best arrangements were being with one of her best friends' family. Occasionally my youngest son and his wife would keep her but she was done in 2 days and would stop eating and lay across the front door waiting for me. Breitenbush didn't allow dogs. So happy you found a good spot for Henry. Your return was probably over the moon. Thank you for ALL of your work and the cooking too!

Yum, a good trick adding the beans, potato and coliflower. Mind you I do tend to cook my mushrooms in butter, and you could have used mushroom stock rather than veg stock, plus as you mentioned dried mushrooms (eg. Porcinis etc for even more earthy flavours.

I don't know if this qualifies as a synchronicity, but I just sat down, after cooking a couple of hours, to a bowl of nearly the same soup when this video came up on my feed! However, I thickened with white rice and seasoning included thyme. But I think it's funny I used the same combo of mushrooms, white/black pepper, and nutritional yeast mentioned in the notes. I really do feel healthier after eating it!

Thank you for the no oil/salt recipe, it looks delicious and I can't wait to try it. Could you, eventually, do a video on herbs/spices, what compliments what, what brings out flavors; is there any salt-ernatives that bring out flavors the way salt does, or good alternatives to salt. I know it's a lot to ask, but you've been cooking for a while and maybe understand the chemistry better than the average lay person. Hypertension is SO common among Americans, and salt is a big factor, any help is appreciated.
