Easy Blueberry Muffins

I made your blueberry muffin recipe yesterday, however, I doubled the recipe and put it into two loaf pans. It is incredibly moist and the lemon gives a nice kick to bland blueberries. Thank you for another great recipe. FYI: for anyone reading this I baked the two loaves at 375 for exactly 60 minutes rotating the two pans at the 30 min mark.

I've never seen muffins get baked so long but they turned out so pretty! I use a trick to make even box mix muffins get a big domed top like bakery muffins. I bake them at a slightly higher temperature (~25-50°F) for about five minutes, then lower the temperature to the normal cooking range for the rest of the baking time. Giving them that initial blast of heat at 400 or 425° makes them puff up without burning or collapsing! (for any fellow muffin fans out there who wanna try this) Edit: also I make my own buttermilk (I never buy it). For anyone who needs it: Mix 1 cup of any kind of milk with 1 tbs lemon juice. If the milk is whole fat some curds might appear; it may look like spoiled milk but it's normal! Mix it by hand and let it sit for a few minutes before using it.

I tried your recipe today. I substituted the eggs with 1/3 cup condensed milk and added about 30-40 ml extra milk. Also, since condensed milk is sweet I added a little less sugar. The muffins came out awesome!!! The whole house was smelling great. Thank you so much for the recipe.

Just baked these and THEY ARE SO GOOD! I used almond milk + ACV to make buttermilk since that's the only milk I have on hand. My family loves it a lot that I'm left with four muffins!

My goodness. This is a fabulous recipe in my baking life. Turned out super goooood and moiiissssst and soft. Most importantly so tasty and handy to make. The topping is my all time fav now, it goes beyond tasty with these muffins. I made half wheat flour and half white. I made it in loaf pan.
