How to bake the most DELICIOUS Blueberry Muffins | Paul Hollywood's Easy Bakes

1tsp Baking Powder
1tsp Salt
230g Caster Sugar
350g Unsalted butter (diced)
1tsp Vanilla extract

I made this yesterday... Really great. I tried blueberries and I also tried apples with cinnamon. My fiance said he likes the apple and cinnamon better. I just diced some granny Smith apples, tossed it with cinnamon, microwave the apples for about 20-30 seconds to soften, and toss a bit of maple syrup (literally about 1/4 to 1/2 tsp) on the apples before putting them in the batter.

Hands down the best muffins I've ever made. I love that this recipe gives you a plain muffin base for creative freedom like adding in the blueberry. Particularly enjoyed thumbing in the blueberries. It made it feel that much more of an enjoyable baking experience. Thank you Paul!

I use a combination of frozen and fresh blueberries in my muffins. The frozen ones hold onto their moisture while baking, and don't disappear; leaving blue holes like the fresh ones can.

Paul is using the reverse creaming method. So instead of creaming the butter and sugar, he is incorporating the butter into the dry ingredients and that wraps the flour in fat which prevents gluten from forming and tenderizes the muffins.

These look delicious and it's fun watching you gobble them down. But...what is the difference between using salted vs unsalted butter? I love using salted butter for a lot of my baking.

If a recipe says use unsalted butter and lists salt as another ingredient you will be doubling or even trembling the salt content in your bakes. So leave out the salt if using salted butter.

salted butter doesn’t allow you to control the amount of salt in a recipe nor does it allow you to add the kind of salt you want(ie;sea salt),also salt is a preservative so for fresher butter buy unsalted.
