Whenever I make baked potatoes I always do a few extra & let them cool. Then I grate them & we have breakfast cups the next day. Only difference is I mix an egg white in the hash browns before mashing them in the pan. You sauté some onions, bell pepper, shrooms and put in baked cups before the egg. Yummy.

My wife has a version of these that's more keto- ish, line the muffin tin with Canadian bacon then crack an egg in and put a piece of avocado on top, cook and enjoy 😉

Sam I made these, loved em, made them again this morning And I put a little bit of chorizo at the bottom instead of hot sauce and it was amazing, I sprinkle parsley and paprika on top too

Try it with the jumbo muffin pan. Much easier to put the other stuff in there.

Excellent, made it for my wife and I, we loved it. No proper pan, so I fashioned 2 from tin foil. Fresh grated taters mixed with salt, pepper, onion and garlic powder. Some sage sausage grind baked with the taters, egg, cheddar and green onions on top. Outstanding!

I do these a lot. I also do them omelette style with bacon, mushroom, cheddar, or bacon, spinach, parmesan mixed in.

Those look delicious, my only concern is how important the cheese is in bonding the "cup" together. I have the misfortune of having a food allergy to cheese (I know), so I assume the hashbrown cup holds with or without the cheese, right? Thanks

That works for me. Might try adding some crumbled cooked sausage to the cup before adding the egg. All is good.

If you use a standard Muffin 🧁 pan if will cook potatoes in 12-15 minutes, not a disposable tin muffin tray 🙄 just saying 🌝

Nice recipe but how hard is it to grate a few potatoes & cheese? No reason to buy pre-grated. Just makes more plastic waste, ie. the plastic bag. Plus fresh always tastes better. Spray grease same deal. Just put a few drops of any basic veg oil and spread with a finger. Takes 2 seconds.

The difference in cook time between the recipes is due to elevation. Flagstaff sits at over 7,000 ft and you, in San Diego, are at sea level thus food takes longer to cook
