Your buttery crust is perfect for a chocolate pie.. My momma use to make this same filling. My husband doesn’t like any creamy pie except sugar cream. I make 2 sugar cream every Thanksgiving along with mince meat, razzleberry, and sometimes pumpkin. I’m making a stout rum cake this year too. I'm so glad you made this pie Catherine!😍 This is basically the same way I made it growing up!😘 It's so hard explaining how to cook the pie filling to someone who never made it before. The first thing they want to do is get out a double boiler. My mom always used a sause pot and that's how we make it too.☺️ The only difference with ours is we only used 2 egg yolks instead of 3. After it was through cooking and we had turned off the burner, we added the vanilla and a couple of tablespoons of butter. The butter smooths out the filling and gives a nice sheen. After my sister got married and was cooking for her family, she stopped separating the eggs and would put the whole egg in the mixture. It didn't make any difference at all. She just didn't like storing the egg whites and then never using them since she seldom made meringue. So now I use whole eggs too. We make coconut pie filling the same way except for no cocoa powder and we add coconut at the end with the vanilla and butter after the filling has finished cooking. I actually burned the coconut once when I added it to the beginning mixture.🥴 Our mom also used this same base for lemon pie. Most people just use water for lemon pies but she used milk for a richer and delicious pie! But I did mention chocolate pie as a favorite of Thomas. Of course I threw in pumpkin and pecan but deep in my heart I knew it was chocolate!😚 This is still our family's favorite but we don't make it often enough!😢 But now that you've made it, maybe I'll be inspired to make it too!😁 Thanks for sharing another great recipe and taking me down memory lane again!🥰
