My favorite is egg wash and Corn Flake Crumbs followed by my grandpa's secret ingredient after cooking which is a good shaking of celery salt Yum Although I've not tried Swai yet I will in about an hour!

Would Powdered Buttermilk be a good binder sub? I made 3 fillets last night and they did not even come remotely close to your finished product lol. I am going to make them again tonight but, I'm following your recipe this round. Mine were a disaster altogether. No flavor, binder fell completely off from lack of heat in the grease, slightly chewy/rubbery etc.

Solt and paper better using 1 hour before frying . Will be good marinated,and taste much better.

Probably your oil wasnt hot enough. Leave the fillets outside to wam up to room temperature then fry them. Hope that helps
