Easy Delicious Lemon Pie with Whipped Creme

Today, I'm making an easy, delicious, and creamy lemon pie. I'm still trying new desserts for this coming spring.
Pie Crust
1&1/2 c of Graham cracker crumbs
1 Tbls brown sugar
2 Tbls granulated sugar
7 Tbls melted butter
preheat oven to 350°
Mix and press into pie dish. Bake for 10 minutes. allow to cool
Filling
5 egg yolks
2 cans sweetened Condensed Milk
1 cup lemon juice
zest of Lemon (Optional)
mix and pour into pie shell. bake for 15 to 18 minutes. Cool on counter, then chill in refrigerator.
Whipped Creme
2 cups heavy whipping cream
1/2 c powdered sugar
1.5 tsp vanilla
whip in stand mixer until fluffy and to your desired consistency

Add a melted pack of clear gelatin (dissolved in a bit of warm water) it will stabilize the whipped cream and then you can frost a pie or cake and it won't separate. Beautiful.

I just made a lemon meringue pie Saturday just like my mom’s and I use a pastry crust instead of a graham cracker one. I don’t use condensed milk either..I cook my filling on top of the stove. One of my favorite pies. Will try this one next time.

My mamma made these all the time. It was my daddy's favorite. it is one of my favorite. I sometimes substitute the lemons with key lime juice to make a key lime pie. My mamma always made a meringue topping too. My family likes plain whipped cream better.

I remember Mrs Edwards pies. My Mom loved the lemon and the chocolate. We got it in OHIO so it wasn't just southern and yes they changed the name to Edwards and no more Bible verses. I believe I will have to make this pie. Looks so good.

I am with you when it comes to meringue, it seems so tasteless to me. I've never made whipped cream but am sure I would like it. I used to make lemon recipes for my Momma occasionally but am not a fan myself. The pies with Bible verses sound so cool! It must have been a southern company, I never heard of them before. I love making bread baskets and filling them with dinner rolls but that is rather labor intensive. I admit that without much family anymore I haven't done it for years. Something cute you could do is make little bunnies out of bread for the boys-everyone really You can even use frozen bread dough. Decorate with ribbon and any candies for the eyes and nose. They are cute and work as dinner rolls for family dinner. I bet you are still enjoying your cake!!
