Wowza! This Is So Good! Hummingbird Cake!

WOW........Here is a blast from the past! Hummingbird cake and boy, is it delicious! Wowza it's so good!
Hummingbird Cake
3 c ap flour
2 c sugar
1 tsp salt
1 tsp baking soda
1 tsp cinnamon
3 eggs
1 1/2 cup oil
1 1/2 tsp vanilla
1 8oz undrained crushed pineapple
2 cups chopped banana
1 cup chopped toasted pecans
Icing
2 8oz cream cheese
1 cup butter
2 lbs powdered sugar
2 tsp vanilla
Preheat oven to 350°. Mix all cake ingredients and pour into 3 greased pans. Bake for 30 to 35 minutes. allow to cool completely and then ice the cake.
Icing
Mix all ingredients until fluffy.

Also, an even greater reason for breaking your eggs in a bowl first is so if there is a blood spot or other unsavory defect in the egg, you don't have to throw out the entire batter.

I watched a KZbinr mess up a double batch of cookies and had a bad egg. Yesterday I watched her again not use a separate bowl and had to pick out a shell. Ahmazing. Once would be enough for me.

I learned that in Jr High cooking class...when they used to have cooking classes. Break each egg in a separate container and add one at a time. 🐣

This hummingbird cake I have been making it since the 70's. I found the recipe in the sunday newspaper. My children were in school. I make it about 1 or 2 times a years when my family comes over to eat. I juse a cream cheese icing. I hope you and your family have a blessed 2023.

I break my eggs in a bowl individually. A friend told me she was taught that in home economics and the reason is if you have a bad egg you won’t ruin the other eggs or whatever you are adding them too. In my 43 years of home making, I have had maybe three bad eggs but I was glad that I broke them in a bowl one at a time. Last year, I had eggs from a lady who was selling them and three of them had developing chicks inside!

If you have a deck of playing card. They work good for smoothing frosting. COOL YOUR CAKES COMPLETELY! No more leaning tower of Pisa. This is a great recipe. I tried HC FOR THE FIRST TIME AND OMG! I’m hooked

Couple cake tricks for you(I used to make huge wedding cakes) take a sharp knife & level the crown of the cake before turning it upside down, makes it level. Then do your base layer icing, put it in the fridge til set, then your final icing layer. You won’t have squishing or tipping. Small dowel rods or yes, skewers is what cake makers use. I made such tall layered cakes, I had to use small PVC pipe to keep them from tipping or to hold the stacking cake plates. They actually fit into small pipes so you can stack a lot.

Same here. I use the unsweetened and it’s plenty sweet enough. I made this back in 90s often. Pineapple, banana, coconut and pecans were all key ingredients. I used half applesauce for the oils. Back when lower fat was a thing and I liked the extra flavor.

Omg, after watching this I just had to re watch it write down all ingredients, went to the grocery store to get what I needed, it took me a while but I got all baked and iced. It's in the frig cooling the icing. But it was so delicious just testing it. Yes it slid and broke of a little. So I ate it. Smothered it in frosting. Lol. It looks a hot mess but who cares. I haven’t had that cake for years. It looks so good. That icing alone just sends me over the moon. You can use your bench scraper to go around the cake. Just use it lightly. Thanks Leslie 🍰

Hi Leslie, I made a Hummingbird cake many years ago, (probably around 2010!) and it too had three layers and with a cream cheese icing. From memory it was so delicious, and so rich that you could only have a small slice. The only problem with a cake that high it is impossible to cut small slices. At the time I had wished I only made two layers as it would have been easier to manage. Thank you for making this cake as it brought back some very happy memories.
