A tip I learned, pop the lemons in the microwave for a bit, this softens the lemons making it easier to juice. I tried it and it worked!

My mom made the BEST Lemon Meringue pies in the world! I wish I had her recipe! All I do know is she used Watkins Lemon flavoring in them, and the lemon filling was not opaque. She did not put powdered sugar in her meringue, and those pies were the ONLY pies I ever ate. I don't really like pies. But those...I loved! 😋 YUMMM

'Enjoying the lemon meringue pie today. Took the "dessert in a cup" approach, so halved the recipe. Needed 1/2 tbsp more lemon juice and same for cornstarch. Microwaved filing for 6 minutes in a medium glass bow - pie filing set up nicely. I made two soup cup (Denmark brand) pie/desserts with meringue (no crust). Loving "pie filing by microwave".

i’m not going to lie I watched a lot of lemon meringue pie recipes and hers is by far one of the best and she didn’t even make the crust from scratch but it looks like it taste better and I love her lemon meringue curd and how white and fluffy the top turned out and I love it when people actually brown the top of it a little bit more cause it just looks tastier like a roasted marshmallow surprise lol great job 👏🏾

Tammy I cried when I made this pie. 😢 I’m 64 years old. It’s been over 40 years since I tried to make a lemon meringue pie. The meringue and I had a love/hate relationship. It Never came out right. We love lemon merengue pie in our family, and I plan to make one today. I've always used the recipe from the old 1968 Better Homes and Gardens cookbook that my husband brought into the marriage, which of course is cooked on the stovetop. No microwave ovens in 1968! Today I will use this recipe. My daughter is a professional baker, so of course she makes her own pie crust. I've been trying out different crust recipes trying to make mine as good as hers. Even using her recipe and directions, I can't make it as good as hers. You talk about cooking like mama did. Oh honey, I need to NOT cook like my mama did. She's a terrible cook. I'll cook like my mother-in-law and her mama did. Those women made wonderfully delicious food, the likes of which I had never tasted before I met them.

I’m with you regarding homemade pie crust. It makes or breaks a pie. My grandmother & mom always made theirs with Crisco shortening- and their crust would melt in your mouth! I am spoiled! First time I’ve ever seen a pie filling cooked in the microwave…. I do love a good lemon meringue pie!

Tammy, I am 68 years old. I like cooking and am pretty good at it, However, I've never tried making cream or lemon pies. Until, I watched You! I have made a Chocolate Cream, Coconut, both with Meringue and I'm in the middle of making the Lemon Meringue Pie. I love using the microwave! Thank You! My microwave is 15 years old and I don't know what the watts are, so it takes 8 or 9 minutes for my pudding. Hoping one day to get myself a Consori Oven like Yours. ;)

Thank you. Some how I knew meringue could be made with powder sugar . You just proved it. I attempted making lemon meringue pie with out measuring. I used granulated sugar. The meringue came out very stiff like a rock. I made fifty . The meringue was very stiff like a rock. I did not use cream of tarter . I made the pie crust. I pre- baked the pie crust. Yet, I did not know for how long to pre-bake the pie crust. I also made the lemon feeling with corn starch . I did not measure. I did use , corn starch. So it was a learning lesson. I love to cook and bake. Cooking is a art. Baking is a science . Thank you. I will watch this over and over.

Thank you so much, I made this pie today, and the husband and I had to stop ourselves from going for seconds. However, I did make it dairy-free by using a 7oz can of coconut condensed milk as the sugar and 2 cups of lemonade as the water. I also did a gluten-free graham cracker crust with maple syrup, and it is so delicious and tart lemony. Words cannot describe! I Will be making it again.
