The sheet pan nachos are literally like a middle eastern breakfast in nacho form 😂😂 it's got the tomato cucumber breakfast salad, the fried toasty halloumi, the pita, the chickpeas (always present at breakfast in the form of hummus, fatteh, or a salad). Fully considering make it out of leftovers of my next full Syrian breakfast spread ❤️😁

I'm half-Syrian, I grew up eating chickpeas in some way or form every single day so I was arrogantly skeptical while clicking but WOW. Will be making the pasta and the larbanzo salad this week and the sheet pan dinner situation as soon as we get nice tomatoes again in northern Europe! (or tomorrow with sun-dried tomatoes instead of fresh ones)

I had a bunch of leftover cooked chickpeas, herbs and lime juice from other projects. There was a head of lettuce in the fridge that no one else had done anything with yet. And some peanuts in the cupboard, which is unusual for us. Then your video showed up in my feed. Larbanzo for supper! Just the thing! And we all loved it!

Goya sucks but that nacho recipe is B.O.M.B. I've never had a larb / laab since they're meaty so I appreciate this introduction to it with the veg friendly chickpea. We have a recipe for a (complicated) Vietnamese vegan fish sauce replacement that I would use. And maybe mash down some of the chickpeas in that one for some texture.

If you've ever had bhel puri or other Indian chaats, an option for your chickpea salad is to do all the chaat accruements (green chutney, tamarind chutney, tomato, onion, cilantro, sev etc etc etc), without the fried bhel puri mix, and it becomes the best chickpea salad maybe ever
