If you don’t want to use egg whites for clustering you can use flax seed glue instead. Cook flax seeds and water in a saucepan for 5 min. Remove the seeds with a sieve and use the gluey water in your mix. This is used in granola recipes.

I'm sure someone here has already said it but in case they haven't. When you do a dry shake with an egg whites the air in the tin expands which may case a blow out. When you shake with ice the air in the shaker the cools and gets closer together causing a vacuum. This is why it can be hard to remove the lid after you shake you cocktail. My advice would be when you do a dry shake use a boston shaker and give it a little whack with your palm before shaking to make sure its properly sealed.

Former bougie bartender here👋 just wanted to say that yes people use less than one egg white all the time. Typically you put your whites in a squeeze bottle and measure with a jigger to keep the cocktails consistent (because egg whites are not).

The lid WAS on wrong! When you use a three-part shaker (base, strainer top, little lid) you have to put the top on first, THEN the lid. If the lid is already on the top when you go to put the top on, too much air will be trapped inside so you won’t get a good seal and things will leak and/or esplode. Made this mistake many times before learning my lesson. Soooo much pineapple juice in my hair.
