This is the first freezer prep video where I feel like my husband and I would actually eat everything on it! Most of the time I can use a recipe or 2, but this is wonderful. For us, this would be 2+ months. Really thinking of stocking the freezer up for spring and do it again in the summer so we can not be cooking from scratch so much during the warm months. Great ideas!

My oldest son is 18 and plans to move out shortly after he graduates this Spring. For shredding chicken, a hack I found helpful is using a handheld mixer. Saves a ton of time.

Has anyone tried making the enchiladas with plain Greek yogurt instead of sour cream? Obviously sour cream tastes better but I’m wondering if you would notice with the seasonings with the healthier swap. We are trying more healthy substitutes at our house recently

I would think it would be ok! I usually replace all cream cheese and sour creams with the plain Greek yogurt and it’s always been good! I did do the sour cream for this recipe and my daughter didn’t like it. But for my enchiladas I usually use just shredded cheese, chicken, green chiles, maybe some onions. I do plan to make them like this again minus the sour cream. Also a little tip! When I’m doing Mexican style food and am using the yogurt as a replacement, I like to add fresh squeezed lime juice or oil and it is SO GOOD! Adds a little flavor, zing and freshness!

Press the wrap down on the food to get as much air out, then put the foil on. It helps with preventing possible freezer burn for the meals that have been in there longer

I’ve been on a bulk occasionally finding time to meal prep but more often I find myself hitting a drive threw 1-2 times a day. It’s rough finding time while working to balance gym and and proper nutrition. I’m hoping freezer meal prep is the answer I almost bought factor meals but this seems way more budget friendly.

Just discovered your channel today! Gonna give it a go, with my family of 5. I love that you give low carb/keto options/suggestions as my son has to have a lower carb/sugar diet. I also have a veggie dodger for a husband so I most things end up with peppers and onions in (extra veg for me and the kids gets cooked on the day). My family prefers a red sauce, bolognaise (uk family) or a meat ragu if you’re American.

This video was everything!!! I am going to make a grocery pickup order and just do the whole meal plan, we don't eat pork so I'll just switch that out for something else. Congratulations for baby on the way! 😍 Please come back and let us know how your freezer meals taste after freezing/reheating! When I was pregnant with my first (and only) I knew I wanted to freezer meal prep but I was so overwhelmed. We lived in a tiny apartment at the time and had a tiny freezer to fill. Some of my freezer meals ended up being us buying the ready-made entrees at Costco that we knew we liked, the ones found in the deli section by the rotisserie chicken! Yum! These meals are too much for 2 adults so I just bought cheap foil containers at dollar tree and split them up then vacuum sealed them after they were frozen so that the food and container wouldn’t be smooshed. Vacuum sealing helped them last longer too! I will admit, making freezer meals this way was not by any means cheap, but it did work out wonderfully for us in between meals that I did have the energy to cook for or the “Pinterest fails” that I would try. LOL! Best of luck to you!

I love red sauce/spaghetti sauce but we have a house divided because my hubby isn’t a fan. So I just make alfredo sauce so it’s easier. But here and there I’ll make some spaghetti sauce/marinara and pour over noodles if I’m craving it.

I want to do it for my husband and I as well! Just divide into smaller meals and use small pans. I already do this with lasagna. I made a double recipe that fits 2 9x13 pans. But I put it in 4 8x8 pans. Then we have half one night and half the next. You could also put into 8 loaf pans so it would be one pan per meal.

Potatoes are among the vegetables not recommended for freezing raw because of their high water content. However, par-cooking the potatoes by boiling or frying allows you to freeze potatoes without discoloration or mushiness. Blanch them in boiling water for 3 to 5 minutes, then transfer them to an ice bath. Just thought I would share in case you did not know.

I love the organization of ur meal prep! I would reconsider the shrimp dish. If I understand it correctly you were freezing it upon bagging it and 99% of shrimp are thawed already when you buy them (you either buy them frozen or “fresh” but those are almost always thawed and it should be stated on the label somewhere) - freezing and defrosting seafood twice in a row is borderline health hazard so watch out. Great efficiency to watch overall for sure! Great job!👍🏻

Nice freezer meals but I do foil first then plastic wrap around pans, it’s easier to just take off plastic wrap, then pop then oven.

Same! But the plastic would stick better to just the pan, I think! I always have to wrap the plastic all the way around the pan, over the foil. That seems a waste, so I will try Adaline's method next time😊

I just came across your channel, it really encouraged me to meal prep which I've never done before. I only meal prepped 10 meals, it took me about 5-6 hrs. I'll have to be better organized next time. I did make the Poor Man's Patties and Sour Cream Ckn Enchiladas. We had the enchiladas last night and they were delicious, but way too much for just me and my husband so we'll be having leftovers this week, so getting 4 meals out of that. So I guess that increased it to 12 meals. WooHoo!!!

There is only two of us left here in New Zealand. My Mum passed away Boxing Day 2020) so it's up to me to do most of the cooking as my Dad can make scrambled eggs and packet Alfredo. The reason while I'm living back in my parents home is because eleven years ago when I was 32 my specialists gave me two years to live due to many illnesses and complications. My health means that I have to force feed myself and it's so painful. I love cooking so I helped Mum to cook their meal (my health means I'm on a soft diet so I prepare my food separately). All this to say that I still cook the same amount and I portion and freeze the extra servings. It means that on days I'm in too much pain or bedridden Dad can reheat the meals to avoid him having to just grab something easy. A few weeks ago I purchased a dehydrator knowing that I'll have to have liquids only and my idea is to dehydrate veges, make a powder and add it to things the soup or smoothies. To go with that I b

For a thicker chili, just use your stick blender and whirl away for a few seconds, makes more like a chili gravy…of course leave as chunky as you want❣️

I have made a good few of these meals and haven’t noticed a difference in the fresh vs frozen. I think it depends how well you seal and how long it’s frozen and if your freezer has any inconsistencies. These have been a very tasty lifesaver for my girls and I the few days we’ve been sick.
