Im so jealous. With my food allergies and restrictions from medical conditions I have to know everything in my food and have to miss out on lots of good food because of it. Like most Asian foods aren't safe for me because of the seafood, fish and shellfish ingredients: Oyster sauce, shrimp paste, dashi, fish sauce and many others, as well as having an issue with beans and most legumes( some I'm extremely sensitive to and make me really sick no matter what, some its certain ways they are prepared I can handle) so I can't have tofu or lentils for example. I hate missing out on good food.

There are many ways to replace eggs! You can use a commerical egg substitute, but there are other options too, depending on what you want the eggs to do. In brownies, eggs mostly are used as a binder and not as much to give lift. Applesauce, which has pectin (the same stuff that helps jams set), would be a good substitute! You can also google "egg substitute" and it should give you some good options, as well as the quantity per egg

I think beetroot does a similar thing to the zucchini, or at least i think that's what's in the brownies my mum's colleague makes. Unlike a lot of other things, the chocolate in the brownies would hide the colour so i have no idea from sight, the texture is neutral to pleasant and i dont notice a difference in taste. They're just Good Brownies.
