I'm Trinidadian and was introduced to Haitian Pate by my friend many years ago...I've visited the bakery and enjoyed them over the years...today, I followed your recipe but used codfish instead and I'm pleased with the results! I will definitely be trying your other recipes!

Here in Florida the Haitian bakeries are stingy with the amount of meat they put in their patties. The meat is so scarce that I think they use a meat flavored spray. From now on, I'll be making my own patties.

I know you can find in the major supermarkets in the frozen aisle with the frozen bread rolls or frozen fruit in a bag. We have Publix down here and I pass it all the time. They never used to be so available though :)
