For me it's that dirty restaurant smell. and I just ate wayyyy too much in early adulthood. My girlfriend still loves to cook with it but the smell is just not very appetizing for me anymore.

adding some additional moisture would be good for the final seasoning process. I'll usually finely chop up onions, add garlic and ginger. Then a splash of vinegar, a few spoons of soy sauce, water, and molasses. You can also add any additional seasons or flavorful sauces. Not too much. This gives the final product some much needed flavor and moisture.

I recommend removing from heat letting your chicken cool off in the water, even for just 30 mins preferably in fridge over night. Its much juicer than pulling it right out.

You can start with half a teaspoon of each: garlic powder, salt, smoked paprika. For black pepper I usually add a bit less than the other seasonings, could be 1/4 teaspoon. Start there and taste it before you add more, if needed.
