Here's a quick and simple recipe for making homemade marshmallows. The marshmallow recipe can be used to make any design you want but this video focuses on the Warawara from The Boy and the Heron.
Full instructions (the full ingredient list is in the video):
1. Start by blooming the gelatin. Sprinkle 1 tsp of gelatin over 1 tbsp of water. Give it a quick mix then set it aside
2. In a bowl, add the egg white and mix until it is frothy. Once it is frothy, add in half of the 15g of sugar. Mix it for a minute then add in the remainder. Continue to mix until stiff peaks form. Set this aside and work on the sugar mixture.
3. In a small pot add 20g water, 10g corn syrup and 30g of sugar. Cook this on medium heat until it starts to bubble. Once it bubbles, turn it to med-low heat and continue to cook for another minute. Stir it occasionally.
4. Immediately transfer the sugar mixture to the egg white mixture. Mix for 2-3 minutes on medium speed.
5. Microwave the gelatin for 10-15s then add it to the mixture. Mix for another 2-3 minutes on medium speed.
6. Divide up the marshmallows and dye into desired colours. Place the marshmallow in piping bags.
7. Pour corn starch over a plate or a small tray. Pipe out a round ball. Pipe little knobs of marshmallow at the sides for arms and legs then add a face.
8. Cover in corn starch. Brush off the excess.
9. Enjoy them as is or toss them into a hot mug of hot cocoa :)
some notes:
- since this is a relatively small batch, I recommend using hand mixer instead of a stand mixer
- use gel food colouring
- if the marshmallows get hard while piping, either quickly pop it in the microwave for 5-10s or place it into a plastic bag then submerge it in some warm water. DON'T microwave for too long or place it in boiled water because it will get too runny.
- use toothpicks to smoothen out the marshmallow
- to conserve on corn starch, feel free to have a smaller work area. you don't need a plate as large as mine
- I personally like to wait a minute or two before covering the marshmallows with corn starch so it has some more time to set. This makes it less fragile when brushing
- a bristled brush works much better than a silicon one. be gentle with brushing.
