To Cook Dry Chickpeas in Instant Pot: Add 1 cup of dried chickpeas and 4 cups of water to the instant pot. Cook on Manual for 40 minutes. Let them sit for 10 minutes afterwards before releasing the pressure. Drain. Easy Hummus: 1 1/2 cups cooked chickpeas 2 tbsp oil 1/4 cup lemon or lime juice 1 tbsp sesame oil 1 clove garlic 1/2 tsp cumin 2-3 tbsp cold water salt to taste Add all ingredients (except the water) to food processor and blend well. you can also soak overnight to improve the nutritional value of chickpeas before you cook them. sprout them for 24-48 hours is another way to get better nutrition

if I wanted to use tahini would it be the same amount? Might try the sesame oil first though. We have Winco Foods which sells bulk and I could get just the amount I needed.

I am lucky that I have an Egyptian chef living next door, he comes over and we cook all sorts of stuff. I teach him Cajun & home cooking and he teaches me a loads of different cuisines! He also gets stuff in bulk for the restaurant so we can even make tahini out of sesame seeds, he put baking soda in the chick peas when they soak & He puts a couple of cubes of ice at the end and it makes it super smooth. Cooking is fun!

I absolutely love hummus. Others have commented that you don’t have to buy premade tahini. Another tip is to add teaspoon of baking soda to the water when you cook the chickpeas. It makes the chickpeas so soft that when you blend them they become perfectly smooth. It’s very hard to get a really smooth texture otherwise. Just drain the cooking water and give them a quick rinse before putting in the food processor.

I have made hummus quite often; and, I use tahini. I buy tahini in the jar when I can find it. There have been times when I bought sesame seeds and made my own tahini. It's really easy to make. I've used hummus as a veggie dip and as a sandwich spread.

I recently traveled to Israel and tried tons of yummy hummus. They serve it with bread, sliced onions, jalapeños and PICKLES! I would have never thought to dip pickles in hummus. The combination tastes amazing.

Sesame oil! That's genius... my tahini always goes bad before i can use it for a second batch. I throw my 1 garlic clove in the processor whole and let it get chopped up small while im gathering other ingredients. Have to scrape down the sides a couple times but it gets it nicely chopped. :)

Sarah...I'm so happy to have found this recipe that doesn't include tahini. I gave it a try and my husband , who doesn't like the ones made with tahini, loved it! Since it's just the two of us, I reduced the chick peas to 3/4 of a cup...that way I can use them all up in one batch.

Thanks for the recipe! Here is a tip for peeling garlic fast: put your cloves in a metal bowl (doesn’t have to be big). Put another metal bowl over it, hold the bowls together, and shake like crazy for 8-10 seconds. The skins will magically be gone and you will love garlic more than ever!!

Cant wait to try this. Tahini is expensive as are the sesame seeds used to make it. A neighbor from Kuwait told me to substitute peanut butter and it really does work. It gives it that toasty nutty flavor.

Looks really good. I bought some ready made at Aldi this past week. It had good texture but I think they over did the garlic. The hummus also has parmesan in it. They also sell a spinach artichoke dip made in Greek yogurt instead of mayo. It isn too bad. I don't eat a lot of dips and sauces, but think I will try your hummus recipe with dried chickpeas. I don't buy tahini either, but I do toast a few tablespoons of sesame seeds and crush them to a paste with a mortar and pestle. I've also used a half tablespoon of peanut butter along with a pinch of crushed red pepper and it works beautifully.

If you add a 1/2 tsp baking soda during cooking the skins break down completely and you get smoother hummus. No taste changes. And the cold water works great, glad you know that trick! 😁😁😁😁😁😁😁 I also use Lentils to make it, and another similar dish called Nbana, it's a spicy lentil spread from Senegal, Easy to make too!

A little tip to share, u can just push down on the garlic under the knife ( I just use my hand) and it peels easily too and then u don't crush it. And couldn't u just skip the mincing step being it is going in the food processor? It looks amazing all plated up like that, I need to do that for all the summer potlucks coming up 😋

I loved your hummus recipe--although the toasted sesame oil did not give the flavor I was looking for. I found some inexpensive sesame seeds at the local market and made my own tahini. Score!! Also, I used some of my fermented garlic and a mixture of lime and lemon juices. Family loves it and a recent crowd raved about it. Thanks for sharing!!

I can’t wait to try this! Looks way easy and I love the substitutes you used. I have made homemade hummus before and it was a lot of work and made the house stink. Plus the tahini I made molded in the fridge because it made a huge batch and I couldn’t use it all... and the hummus wasn’t even that good. 🤷♀️

I use whole sesame seeds and make my own tahini. I get raw sesame seeds from azure standard and throw in the food processor to grind until they form a paste. Then I make the tahini. It stores really well for a couple weeks on the shelf or for a long time in the fridge or freezer.
