Hello Geoff - your tarts look wonderful! I started making jam tarts with left over sweet pastry and shop bought jams. I was making them one day and my daughter asked me if I wanted her left over raspberries just to eat - at first I thought ‘no’ but then a light bulb went on in my head and I popped a fresh raspberry into the middle of my pastry cup and popped the raspberry jam over the top and baked them as usual. My goodness! The surprise of a juicy raspberry when you bite into your tart was wonderful and I do it all the time now! ( apologies for the long waffle…) Liz

Those look so simple but so good... I haven't had Jam Tarts in a very long time either... I will give that a go for sure... I have some fig and lemon jam that I made a while back , and some apricot sounds good too. Thanks for the tip of adding a bit of water to the jam too.

@@geoffsbakingblog - Yeah, I hadn't seen gooseberries for ages when they turned up at the fruit farm I visit in Wexford. Lovely in a tart (I also do them with a pastry case and lightly ginger flavoured sponge top)

Anyway I will try again...HI GEOFF,,, I've been making your rich chocolate cake into muffins with those lovely cases with the sticky up SIDES.. plus coffee icing they look scrumptious... Now JAM TARTS BRING BACK GREAT MEMORIES OF MY GRANNY SHE ALWAYS MADE JAM AND ALSO LEMON CURD TARTS SHE WOULD DO THEM IF WE WENT TO TEA( A SIT DOWN TEA) ALONG WITH VICTORIA SANDWICH CAKE AND SANDWICHES I LOVED IT... Hi Henrietta. Your muffins sound delish. I don't think many people make jam tarts anymore. They seem to be more of a thing from out childhood. I never think those in the shops taste of anything very much at all. But mine have been enjoyed by my niece and her husband. She, apparently, scored them a 'fat 10 out of 10'.

Nice and easy! I´ll make them. I have tons of jams of different flavors. I make my own jam, so when I do, I make many flasks of each. At the moment I have strawberry jam, grape jam (from the vine that my dad has at his backyard), kinoto marmalade, orange marmalade (made with the bitter and inedible wild oranges from many trees from the streets of my town

HI Farida. I can eat many of these too. You can make the pastry without the egg yolk, but you would need to use a little more butter, or water, to compensate. Try it by adding a tablespoon of water first, and then more if needed.

Hi Cindie. As I mention in the video the amount of jam is individual choice. Of course the type and sweetness of the jam is also a matter of personal preference.
