I've made this pie crust several times now. My wife thinks it's a better crust than the non keto version she used to make. I've used it for cheesecake, your lemon sour cream pie, your pecan pie, chocolate pie (using your chocolate pudding recipe), and a "double" chocolate pie with your chocolate crust. Coconut cream is next.

I made this to use in the Pecan Pie recipe and baked for 10 minutes as instructed in that video. When I took it out of the oven, I sprinkled stevia sweetened chocolate chips on the bottom while the crust was still hot. Of course they melted. Tomorrow I'll add the Pecan filling and bake some more. So exciting. This is a very expensive pie and unless my ship comes in, won't be able to make it again. We will have to cherish every bite.

This is my go to crust. Used it this week with your crustless pumpkin pie recipe to make pumpkin pie. I didn't think a batch intended to fill 4 - 4oz ramekins would be enough filling so I doubled the recipe and it was just right. I had intended to use it with your coconut pie recipe but when I went to make it I discovered I didn't have any almond flour so I used the coconut crust recipe instead. The pie was good but I think I prefer the almond flour crust. Also, since it's just two of us I needed to freeze about half the pie so I didn't add the recipe topping. Instead I used the Land 0 Lakes sugar free heavy whipped cream spray.

You would need to add some sort of stretching agent, like a teaspoon of xanthan gum, or perhaps some egg white protein powder. As it stands right now, this does not have the stretch that would be required to roll out. I hope that helps.

I find that anything I make with coconut flour 'TASTES' like coconut. I like the coconut smell but not the taste. I don't notice a specific taste with almond flour. Maybe that's why she's saying coconut flour doesn't work.

She didn't say you can't make a pie crust with coconut flour, she said/meant you can't substitute it in this recipe. You cannot substitute almond to coconut 1:1 because they react differently to liquids, for example

I tried the pie crust recipe and I enjoyed it! It wasn't as good as regular crust and I had to add a bit extra butter but it was good for a keto recipe.💖

If you fully bake the crust first, it means the filling does not need baking. Think coconut cream. If it's a baked pie, then it's something like pecan, where you bake the filling along with the crust.
