Recipe:
Lemon Keto Cheesecake Pie Dessert Thing:
Make the crust first.
Start off with a cup of chopped pecans.
Melt two tablespoons of butter until it's nice and smooth.
Add a teaspoon of Magic Baker's Granulated:
Use a mini chopper to chop those pecans. Quick and easy!
Mix in the melted butter and Swerve until everything's well combined.
Press the pecan mixture into whatever you want to serve it in. I use a 3" x 6" x 7.5" glass container.
Bake at 375 degrees for about 10 minutes,or until golden brown, then let it cool completely.
Now for the Lemon Pie Filling:
In your favorite yellow mixing bowl, whip up 1 1/2 cups of heavy whipping cream until it forms stiff peaks.
Add 8 ounces of softened cream cheese, 2/3 cup of Magic Baker's Confectioners, and a teaspoon to a teaspoon and a half of vanilla. Mix until smooth.
Pour in 1/2 cup of fresh lemon juice, or less. Taste as you go!
Stir in a tablespoon of lemon zest for that extra flavor kick. Taste it !
Pour the filling into your pecan crust and pop it in the freezer for 1 to 2 hours and then thaw completely before serving.

I just made this. I did not have lemons, but I had a huge heirloom orange. Because the juice of the orange is sweeter than lemon juice I used less sweetener. I used only 1/4 cup of monkfruit. I can’t wait to eat it later after dinner. Happy Mother’s Day!

I followed everything according to your recipe except I used the orange and cut the sweetener. Monkfruit is the sweetener I like the best. It tastes most like sugar (to me) and has no aftertaste.

@@southernketo I liked it a lot with the orange. I cut the sweetener to half of what you used. But some might like it sweeter than I do. I have been hearing a lot about allulose as a sweetener in KZbin videos. It also has a good taste to me. I am diabetic and from what I am hearing about it it might be what I use in the future. Apparently it is a sweetener that might have some health benefits.

@@sheleneworland1497 Thank you! It's a really good sweetener. It's part of that magic baker's blend from Splenda. It has allulose as well as stevia and erythritol. I think it gives it a really balanced sweetness. I use allylation my ice cream to help it stay nice and creamy instead of getting hard in the freezer

Thanks! I didn't even get to have a piece myself that night... I have a different one coming up for a slice it, but I don't think anybody wants to see me eat 🤣 also, I don't put carb count on mine because all ingredients are different. After trying some of the other big KZbin recipes, I figured out quickly that the carb count the list and the actual carb count can be completely different! One recipe was supposed to have four grams of total carbs and it ended up with 12. Another listed 8 g and it was 18 total. I would definitely use an app like Carb Manager or something similar for the exact ingredients you were using, and double check every recipe you make. There's a lot of bad information out there...

I found basically the same recipe from another keto site that is even easier. All same ingredients except only use 2-3 Tbs of juice and you add a packet of keto lime ( or lemon) jello to the whip cream, cream cheese mixture. It eliminates the need to put it in the freezer. It only needs time in frig before serving. Your recipe uses a lot of juice which makes whipped cream mixture soupier which is why you have to freeze it.

Yea I didn’t watch the video because of the music, too loud and distracting. But it is your video and it is your choice to have the music too loud. Just some of us are older so it’s more difficult to hear separation from loud music and someone’s voice. W can always turn up, or down, someone’s voice but not when it’s got loud music too.

This is my first time watching this channel. I think ya'll is so cute . You honor your wife and that's a big plus in my book. SO happy to know some Southern Men love to cook, are in love with their wives, we need more of this respect and LOVE online and in daily life. My family is originally from Chattanooga TN and Huntsville Al. This recipe . sans the Swerve ( which did not exist way back when i was a child ) is very much like one my Mom made often. She did meringue sometimes. Super yummy and easy. Pecans can cost a fortune here in N Callie, but its worth it. Walnuts are everywhere and about half the price. NOT the same but close. In Central Ca,, the San Joaquin Valley. Merced especially, has pecan trees growing all over , in parks and such. People are allowed to glean the nuts from the ground. Its a lot of work but I have more time than money . Id like to add my opinion about the background music, its hard to hear you over it. Also, I was eagerly awaiting you enjoying the dessert cutting it and serving it. It was a bit of a let down not to have included that in this video. Thank you,a nd your wife, for an entertaining video and a good recipe for dessert .

I love everything about this recipe! I can no longer have almonds due to kidney stones, but pecans are my favorite nut anyway (fellow southerner here). It's wonderful with lemons, and today I'm going to buy limes and try it with that. BTW, I'm in the please ditch the music group--I listened on my computer both with and without ear buds in, and in both ways the music was distracting. Had to turn off the sound and use cc.

I have used the Nellie's (I think that's the name) key lime juice in a bottle and it was actually good in that recipe because I couldn't find key limes at the time. I have gotten with my KZbin support folks and figured out what happened. It was some sort of frequency problem. I had to change a few settings and it should be fine now. I was wondering why nobody had complained before about it and then all of a sudden it happened. Now I know, so I hope you'll enjoy my future videos a lot more!

Hey, it's a 3" deep x 6" x 7.5" . I wish I would have remembered to cut it and take it out, but we had people over to eat that night and it was gone before I even got a piece myself 😂. I'm going to do the lime version also at some point and I will definitely cut it then

If someone has ADHD or similar, they may have trouble distinguishing your voice over the music. If someone is hard of hearing, they may have the same problem . I know you try to talk loud but I thought I would point out this segment of the population. By the way, my husband will love this dessert.

I am partially deaf. My students also have ADHD. I use CC, turn the sound off, and put noise canceling headphones on them. That seems to do the trick. I am a severe T2 diabetic. Your recipes have been a game changer for me. Keep up the good work, and thank you for all you do!
