Easy Lakadi Methai/Sweet Sticks / Sugar Coated Sticks (Fiji Indian Style)
Ingredients:
• 2 cups plain flour/all purpose flour
• Extra flour for rolling and dusting
• 1 tbsp sesame seeds
• 2 tsp butter (or oil or ghee)
• 1 cup Tap water
• Oil for frying
Sugar syrup
• 1 1/2 cup sugar (white or brown)
• 3/4 cup water
Method:
1. Take flour and add butter and rub till it resembles fine bread crumbs
2. Add sesame seeds, and give it a quick mix
3. Add tap water little by little and make a stiff, but soft dough
4. Divide the dough into two, roll it into a bowl and flatten it up slightly, coat it with dry flour and put it in the dish and repeat it with the other dough.
5. Take one ball at a time and roll it to about 3 to 4mm in thickness
6. Cut it into 3 sections, and then cut each section into thin strips, put it on a plate and put it aside.
7. Repeat this process with the rest of the dough
8. To cook the lakadi methai, take a wok and put it on medium to low heat and heat up some oil
9. When your oil gets hot, fry up the lakadi methai, in batches till you get a light golden colour
10. Take it out and drain on some paper towel, repeat the process
11. To make the sugar syrup, take a pan and put it on medium heat, add your sugar and water and bring it to a boil
12. Continue cooking till you get 1 thread consistency.
13. Turn the heat off, add your cooked lakadi methai to the syrup, use 2 spoons to mix it, lifting it up from the bottom, coating well to combine
14. Continue this process till the syrup has hardened and a white coating is formed on the lakadi methai.
