Watch as we create a lovely #French Liver Pâté from grass fed #beef. Few things are more healthy than liver, combine this with Cognac and it becomes the food of the gods.
The recipe takes about 20 minutes from start to finish.
Ingredients :
1 lb Beef Liver sliced thin
3 T Tallow
3 T Butter
1/4 cup Cognac
1 tsp Thyme
1 tsp garlic powder
1 tsp onion powder
1/2 tsp salt or to taste
1/2 tsp pepper or to taste
Recipe :
Sprinkle thyme on liver and sear on both sides of liver in hot pan with 2 T Beef Tallow. Add Cognac and reduce heat and allow to cook through but not over cooked.
Remove liver and deglaze the pan with about 1/4 cup of water.
While the liver is still warm cut it into pieces and place in food processor or blender, add butter, remaining tallow, garlic, onion powder and the juices from the pan. Turn the blender on high and thoroughly blend until you’re happy with the mix. Should look kind of like a chocolate mousse.
Place in clean jars, place in the refrigerator to settle and cool for a couple of hours. Keep covered and it will remain good in the refrigerator for up to 10 days, freeze for up to 3 months.
Serve on fresh bread or crackers, also delicious with fig chutney.
