INGREDIENTS:
1 1/2 pound Beef Liver
1/2 Large White Onion
1 Shallot
4 Garlic Cloves
Salt
Pepper
Cayenne Pepper
LET'S COOK:
•Slice Onion and Shallot
•Coarsely chop Garlic Cloves
•Cut Beef Liver in `1-2 inch h pieces
•Add enough oil to coat the bottom of a skillet and caramelize the onion, shallot, and garlic (continuously stir so the garlic does not burn)
•Add 1/4 teaspoon of salt to the pan to help break down the vegetables
•Once the vegetables are caramelized remove them from the skillet
•You can use the same skillet for the beef liver just add some more oil, get the temperature up to a medium high heat and add the beef liver stir until all pieces are brown and there is no pink visible on the meat. Do not cook beyond that point the liver will become tough. Remove from the skillet.
•Add the liver, caramelized vegetables, 1/4 tsp salt, 1/2 tsp black pepper and 1/4 tsp cayenne pepper into a food processor and blend.
• Stop and scrape the wall of the food processor to make sure all ingredients are blended evenly.
•After the first blend taste the pâté to and this is where you can make this recipe your own. Add more salt or any seasonings you wish and blend 2-3 more times until the pâté is smooth.
•Once it is done it's ready to serve. It can be stored in an air tight container and you can also freeze it to use on a later date.
