First off, that apron is adorable. Meal prep is the best and easiest way to stay feeling good and in control IMO. Thanks for sharing! Where is the jarred curry from? To answer your hubby's question to why you shred chicken "Because there's a better surface area ratio for the sauce to cling to for optimal curry delivery, of course." (that would be my answer) Also, Trader Joes has or used to have at least a really good Tuna in Red Panang Curry packet that's macro friendly, would recommend that! - Kali

Haha that's definitely the best answer for shredding chicken!!! And thank you :) I got this one from Natural Grocers, but I believe I've seen it at Safeway, too. Let me know how it goes if you try it out!

@@carolineofenstein What is the brand? I love curries but I haven't found any good jarred sauces. Usually I just get the real deal from the restaurant and add a bunch more chicken #swolehack lol. Hi thank you, this is useful. I don’t have a microwave though 😢 Also I’ve always been told not to reheat rice. Is this not true?

You can always reheat things on the stove! Rice is one of my staples. I make a big batch with meal prep and reheat all week no problem :) One thing that can help, add a splash of water to your rice so it doesn't dry out when you reheat. Hope this helps!

Hi! I like to do any tequila (your choice, or even mezcal for a different flavor) with a splash of cointreau, lime juice, and lime la croix. You can add some homemade monkfruit simple syrup if you like it a little sweeter :)

You mean while you're cooking it? It's all in the timing!! I stay very nearby as I'm waiting for it to boil and the second I hear the lid start to jiggle, I turn it to low and then set my timer for 15 mins :)

May I ask how many pounds of chicken breast do you use and also, was that minced garlic or ginger you added in?

Depends on the week, but I usually cook as much as possible to have leftovers and hit my macros :) I would recommend taking your daily protein goal and dividing it by the number of meals you eat. For example, 145g/5 meals = I aim for about 30g protein per meal. If I'm prepping 5 lunches and I want 30g protein in each, I'd need about 20 oz of chicken!
